Honey Pistachio Baklava Cheesecake

Ingredients:

For the Baklava Layers:
1 cup unsalted pistachios, finely chopped
1/2 cup walnuts, finely chopped
1/4 cup sugar
1 teaspoon ground cinnamon
16 sheets phyllo dough, thawed
3/4 cup unsalted butter, melted
For the Cheesecake:
2 lbs cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1 tablespoon vanilla extract
4 large eggs
1/4 cup all-purpose flour
For the Syrup:
1 cup honey
1/2 cup water
1/2 cup sugar
2 tablespoons lemon juice
1 cinnamon stick

Directions:

Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
Prepare Baklava Layer:
Combine pistachios, walnuts, sugar, and cinnamon in a bowl.
Place one sheet of phyllo in the pan, brush with melted butter, and repeat, layering 8 sheets with butter. Sprinkle half of the nut mixture over the top.
Layer 8 more sheets of phyllo with butter, sprinkling the remaining nut mixture after the fourth sheet.
Prepare Cheesecake Filling:
Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time, then stir in flour until just combined.
Pour filling over the baklava layers in the pan.
Bake for 1 hour or until set. Allow to cool in the oven with the door slightly open.
Prepare Syrup:
Combine honey, water, sugar, lemon juice, and a cinnamon stick in a saucepan. Bring to a boil, then simmer for 10 minutes. Remove cinnamon stick.
Pour syrup over the cooled cheesecake.
Chill in the refrigerator for at least 4 hours before serving.
Prep Time: 30 minutes | Cooking Time: 1 hour | Total Time: 5 hours 30 minutes | Kcal: 580 kcal per serving | Servings: 12 servings
