Follow lead and make salad the star of your holiday celebration! Our baby greens are fresh and festive topped with roasted squash, breaded feta, sugared cranberries, maple dressing, and more. Recipe below & link in bio for more salad inspiration!
Roasted Delicata Squash:
2 delicata squash
2 tbls olive oil
2 tbls maple syrup
1 tsp salt
1/4 tsp pepper
1 tsp fresh thyme, removed from stems
Preheat the oven to 400F.
Slice the delicata half lengthwise and scoop out strings & seeds. Slice in ½ inch rings.
In a bowl, toss the slices in olive oil, maple syrup, salt & pepper. Make sure to toss well so that each slice is coated. Arrange slices on a large baking sheet covered in parchment.
Bake in the oven until tender and starting to brown, about 20-24 minutes, flipping once halfway through. Remove from oven and sprinkle with thyme.
Breaded Feta:
1/3 cup all-purpose flour
1 1/2 cups Panko breadcrumbs
1 large egg, beaten
1 black of feta cut into cubes
oil, for frying
Put the flour in one bowl. Pour the egg mixed with 1 tbls water in another bowl and add the Panko to a third bowl.
Dip the feta cubes in the flour, then dip in the egg and then dredge in the Panko.
Heat 1” of oil in a skillet over medium-high heat. Fry the cubes until golden and crisp on all sides. Remove and drain on paper towels
Sugared Cranberries:
1 1/2 cups sugar, divided
1 (12-ounce) bag fresh cranberries
Combine 1/2 cup sugar and 1/2 cup water in a medium saucepan over medium heat, stirring until sugar is dissolved. Stir in cranberries until well coated. Using a slotted spoon, transfer to wire rack; let dry for at least 1 hour.
Working in batches, roll cranberries in remaining 1 cup sugar until well coated; let dry for at least 1 hour.
Maple dressing:
2 tbls pure maple syrup
1 tbls Dijon mustard
1/2 tsp Kosher salt
1/4 cup apple cider vinegar
3/4 cup extra-virgin olive oil
freshly ground black pepper, to taste
Whisk together the maple syrup, mustard, and salt in a small bowl. Add the vinegar and whisk until smooth. In a slow and steady stream, add the olive oil. Season with black pepper to taste. Add more salt if needed.
