As spring draws near, I’m getting more and more inquiries about hatching eggs and chicks as my waitlist continues to grow. As much as I am grateful for the interest, I want to remind everyone that I am just a hobbyist. I am not a big hatchery. I have small breeding pens, and my goal is to breed for quality, not quantity.

Breeding chickens is just something I enjoy, and the beautiful eggs (and meat) are a bonus. A number of the eggs I collect get sent to shows while many chicks that I hatch are sent to grow out pens. That leaves a *very* limited number of hatching eggs and chicks that I make available to others to help pay for feed and maintenance costs.

In addition, I am also at the mercy of the weather and the chickens themselves. We typically have a late winter and often still have sub-freezing temperatures until after Mother’s Day in May. That means my laying season starts very late. I know some breeders have chickens that lay all through the winter. I am not one of those. Most of my chickens have now stopped laying for the winter, and I am unsure of when they will start back up. My hope is that they will be laying again by February/March.

Recently took a dive into sourdough and trying to figure out ways to use up the discard (and also the plethora of eggs we have been getting from our Olive Eggers). This discard pasta is a keeper! We used all 9 eggs because my boys made their own pasta dough too, and it was so delicious. ☺️
