I love ramen and this is a favorite easy veggie version in under 30 minutes! It's the end of the Yachats Mushroom season (you really should Visit Yachats Oregon Coast, and the festival is a great time to do it) so we can easily replace the button mushrooms in this recipe for a tasty local option!

Poor hubby wasn't feeling the love for all the work he puts into caring for the quail today - one of the girls jumped out while he was cleaning her cage and putting in the sand bath for spa day - I could hear him in the bird room crooning to her, then telling her firmly to stop going places he couldn't get into, then the exasperation set in with a "well fine then, you're missing your bath".
In walks the lady that says "good morning ladies!" and chatters at them while I collect eggs and feed them. I guess I'm the good guy (?) because I leaned down to find her and said "where's my sweet girl?" and she bolted out and charged me, LOL!! My poor husband does the majority of the grunt work, and he does yatter at them the whole time, but apparently I'm a little more soothing in their little minds?

HOW TO STORE YOUR QUAIL EGGS FOR FRESHNESS

Fresh quail eggs can be stored numerous way. Learn all about the best method for storing quail eggs for freshness!

Raising coturnix quail has been one of the best decisions we’ve made for our homestead. They are a wonderful source of both meat and eggs for our family.
Since our eggs are fresh from the backyard, we don’t have the benefit of a “best by” date being stamped on the egg carton. That means we have to calculate how long our eggs are good for on our own.
The expiration date of your quail eggs depends on how you choose to store them. Some methods are short term, while others long term.

DIFFERENT STORAGE OPTIONS FOR QUAIL EGGS
The most popular methods for storing quail eggs are:

Unwashed, at Room Temp
Unwashed, in Fridge
Washed, in Fridge
Water Glassed
Pickled
Boiled

SHOULD I WASH MY QUAIL EGGS?
When it comes to storing fresh eggs for eating, it is best not to wash them. This is because quail eggs have a natural protective bloom that covers the egg. The bloom is a clear layer that is applied by the hen’s body prior to the egg being laid.
Even though an eggshell looks solid, it is in fact porous. The bloom coats the egg, filling in the pores, and reducing the risk of bacteria entering the egg and reduces moisture loss from inside the egg.

This protective bloom helps keep your eggs fresh longer and allows them to be stored at room temperature.
Occasionally, if an egg is really dirty, you may want to wash it before storing. If this is done, the egg should go into the refrigerator for storage.

STORING FRESH QUAIL EGGS AT ROOM TEMPERATURE
If you’re choosing to store your unwashed quail eggs at room temperature, you can expect them to remain fresh for about 2 weeks. Only unwashed eggs should be stored at room temp.
I’ve noticed that after the 2-week mark, the eggs start to get watery, which is a sign of aging. While the eggs may still be safe to consume at this point, they have definitely lost some of their freshness.
This amount of time the eggs stay fresh at room temperature is also affected by the temperature of your house. If you have a nice cool house, the eggs may store for a bit longer at room temp.
When we have an abundance of eggs that I know we won’t be able to consume in the next couple of weeks, I’ll start storing them in the fridge.

HOW LONG DO FRESH QUAIL EGGS LAST IN THE FRIDGE
Unwashed quail eggs will remain fresh in the fridge for about 3 months. Washed eggs last about 6 weeks in the fridge.

Storage time for washed eggs is less than storage time for unwashed eggs. This is because the protective bloom has been removed.

When storing any eggs long term, it is important that you know how to check for the signs of a spoiled egg.
If the egg smells off when you crack it, or it is cloudy or off color, it shouldn’t be consumed...

𝐒𝐦𝐨𝐤𝐞𝐝 𝐬𝐚𝐥𝐦𝐨𝐧 𝐚𝐧𝐝 𝐪𝐮𝐚𝐢𝐥 𝐞𝐠𝐠 𝐂𝐚𝐞𝐬𝐚𝐫
9 quail eggs
1 thick slice sourdough, cubed
olive oil
1 little gem lettuce
a handful of mixed leaves
150g smoked salmon, torn
1 tbsp capers, rinsed�
1⁄2 a small bunch of chives, snipped
1⁄2 clove garlic, crushed
2� anchovies
25g Parmesan, finely grated
1 tbsp� Greek yogurt
2 tbsp olive oil
1⁄2 lemon, juiced
Heat the oven to 200C/fan 180C/gas 6. Bring a pan of water to the boil, add the quail eggs and boil for 3 minutes, then drain and put into cold water to stop them cooking.
Toss the sourdough cubes with 2 tsp olive oil and some seasoning on a baking tray, put in the oven and bake for 8–10 minutes, or until golden and crisp.
Put the crushed garlic clove and anchovies in a mortar and crush together with a pestle. Add the Parmesan, yogurt, olive oil and lemon juice, and mix together with a little pepper. Peel and halve the quail eggs.
Separate the Little Gem leaves and roughly tear, then pile on a platter with the other leaves, quail eggs, the sourdough croutons, smoked salmon, capers and chives. Spoon over the dressing and toss together gently

Quail cages need to be very specific in size.
Quail are prey in the wild and are easily spooked. If you just want a few for general enjoyment, and you have the space, you can have a backyard coop with a roof at least 6 ft high - providing a square foot for each bird. If you have a larger production for meat and/or eggs then cages with a tilt floor for egg collection and a grid work large enough for p**p to be kept away from both feet and eggs, without being so large it could trap or harm your birds. The height of the cages cannot be more than 12 inches because of the problem of spooking mentioned above. Anything higher than that and neck damage and death occurs.

Quail molt in the early fall, and that slows their egg production. Many farmers will increase production by adding light to their environments.
Camp One Quail does give a little boost of light since our birds are under roofs to protect them from the local wildlife and the higher wind/rain conditions, but we choose to not force egg production during the month or so of molting.
Instead, you will see fewer cartons available in our farm stand and smaller deliveries to local restaurants & our birds will be lounging in sand baths more often to help with any discomfort from new feather growth - we believe that makes for a happier group of ladies!

Goat Cheese and Quail Egg Canapés
Winemakers Mireia Taribó and Tara Gomez served these canapés of airy whipped goat cheese and tender quail eggs on crisp crackers as a first course at a feast at their winery, Camins 2 Dreams in Santa Barbara County.
Ingredients
12 quail eggs

3 tablespoons chia seeds

2 ounces goat cheese (about 1/2 cup), chilled

½ cup heavy cream

Kosher salt, to taste

24 cornmeal or polenta crackers

Thinly sliced fresh white sage leaves and lemon peel strips, for garnish

Directions
Place quail eggs in a small saucepan, and add cold water to cover by 1 inch. Bring to a boil, uncovered, over medium-high. Boil 3 minutes. Using a slotted spoon, transfer eggs to a bowl of ice water. Let stand 5 minutes. Peel eggs; set aside.

Toast chia seeds in a small skillet over medium, stirring often, until fragrant and glistening, 3 to 4 minutes. Transfer seeds to a bowl; set aside.

Combine goat cheese and heavy cream in the bowl of a stand mixer fitted with the whisk attachment. Start beating on low speed, and gradually increase speed to medium-high, beating until the mixture forms stiff peaks, 45 seconds to 1 minute total. Season with salt to taste.

Spread about 2 teaspoons goat cheese mixture on each cracker. Working with 1 quail egg at a time, roll egg in toasted chia seeds to coat. Discard any excess chia seeds. Cut eggs in half lengthwise, and place 1 egg half on each cracker. Garnish with white sage leaves and lemon peel strips.

Make Ahead
Quail eggs and chia seeds may be prepared up to 1 day ahead. Store peeled quail eggs in an airtight container in the refrigerator. Store toasted chia seeds in an airtight container at room temperature.

Nutrition: per egg
kcal 259 fat 19g saturates 5g carbs 13g sugars 3g fiber 2g protein 8g salt 0.7g
Ingredients
2 tbsp white wine vinegar
12 quail’s eggs at room temperature
(see tip below)
500g sausage meat
10 thyme sprigs, leaves picked and
roughly chopped
75g caramelized onion chutney
50g plain flour

Method

STEP 1
Fill a large pan with water and bring to the boil. Fill a bowl with cold water and add the vinegar. Lower the quail’s eggs into the boiling water with a slotted spoon and cook for 2 mins. Scoop out the eggs, plunge them into the vinegar water and leave to cool for at least 20 mins, or drain and chill for up to 24 hrs.

STEP 2
In a large bowl, mash the sausage meat, thyme and chutney until well combined. Drain and carefully peel the eggs. They should be softly boiled, so will be delicate – try not to break the egg white as you peel them.

STEP 3
Spread the flour over a plate. Whisk the hen’s eggs in a wide, shallow bowl and tip the breadcrumbs into a third dish. Divide the sausage mixture into 12 patties. Take one patty and flatten it in the palm of your hand. Put a peeled egg in the center and carefully wrap the patty around the egg to completely enclose it. Roll in flour, then egg, then the breadcrumbs. Continue with the remaining 11 eggs, then chill for at least 30 mins, or overnight.

STEP 4
Half-fill a large pan with oil, heat to 180C on a thermometer, or until a cube of bread browns in 45 secs. Gently drop in a few eggs, making sure you don’t overcrowd the pan, and cook for 3 mins or until deep golden brown and crisp. Remove with a slotted spoon onto a tray lined with kitchen paper, and sprinkle with flaky sea salt. Serve warm or cold. Will keep in the fridge for 1 day.

Happy to be donating 11 dozen eggs to Oceanview Senior Living tomorrow! The residents have been fans from (literally) day one, seeing the eggs before they went into the incubator, watching them on our YouTube channel through the whole process of incubation and excitedly watching hatch day. They were there to sympathize when we lost some and cheered us on when our girls gave us our first egg, so it's only fitting that they learn how to pickle quail eggs using those girls eggs!
