On this lovely day I offer a lovely recipe for chocolate/lavender silk pie. This is one I adapted from Elizabeth Labau’s Sugar Hero site.

You need a baked and cooled pie crust.
You then fill it with a lovely chocolate ganache.

Filling:
2 C heavy cream
2 T dried culinary lavender
2T granulated sugar
2 T light corn syrup
2T unsalted butter at room temperature
8 ounces bittersweet chocolate, finely chopped

Combine heavy cream, lavender, sugar and corn syrup in saucepan. Bring to boil and then immediately remove from heat. Cover with lid and steep for 15 minutes.

Return to heat and again bring to boil.
Remove from heat and pour through mesh strainer over chopped chocolate.

Whisk until chocolate is melted and mixture is smooth and shiny.

Add butter and whisk until melted in.

Cool mixture to room temperature. Whisk occasionally to prevent skin from forming.
Pour into cooled crust.

Garnish with whipped cream. I use cream whipped with lavender syrup and cocoa.
Enjoy!

Such a lovely day!! I’m getting the urge to plant even though it’s a full two months+ until I can. In a recent exchange with a lavender fan I revealed what madness a lavender farm can lead to. Once, after one of the many catastrophes we’ve had (drought, polar vortex, disease, flooding) I tried an experiment. I replanted one row in the same way as usual. In the next I gently kissed each plant and whispered “live long and prosper”. You can probably predict the outcome - not one iota of difference in how well they did. But when you love lavender, you’ll try anything!

I ordered more lavender today! Found a place within driving distance in Michigan where I can get the variety that I can’t get locally. (For the record I usually buy from AB Hatchery, Wendel Niepegan’s and Casey’s.) so in April - not that long! - I head north and come home with a car full of lavender!

A foggy day at the lavender farm. It was just so pleasant on this Groundhog’s Day that I had to make a visit. Preliminary inventory? Looks like we need at least 250 replacement plants. But what’s that to hard workers like us? Spring will be here before you know it! And yes, our barn does need a paint job!

It’s such a relief that the temperatures are warmer. I have no idea how many plants we lost in the recent cold snap. But to be a lavender grower in Central Illinois you have to be optimistic! It’s almost February -a blessedly short month- then March brings Spring! On we go.

These very cold low temperatures make me so nervous! Our lavender can handle zero or even a little below. But much below -5 and we can start to lose plants. Last year we lost about 20% due to just one severe cold snap. But at least there’s snow on the ground which gives a bit of insulation. Fingers crossed!

A beautiful but COLD day at the lavender farm. We took a few farmers market supplies (that can withstand freezing) out to the barn. Abby the farm dog enjoyed the romp, but I’m glad to head home!

Friends a brief warning. There is a dreadful illness going around called Norovirus. I have it and it’s awful!! Apparently it’s hitting Central Illinois hard. There’s no vaccine and it is super contagious. So please think about masking up if you go out, washing your hands constantly and washing down surfaces with a bleach wash - hand sanitizers and typical surface cleaners don’t kill it. Please be careful and stay well!!!

I found a great new use (two actually) for our lovely lavender syrup. I made cocoa with the Hershey’s recipe, but used the syrup instead of sugar. It was great!
I also discovered that adding lavender syrup as you’re whipping cream makes it delicious. I used it on peach pie.
So now I’m imagining cocoa made with lavender syrup topped by whipped cream with a touch of lavender syrup. Heaven!
