Lemon Blueberry Loaf 😋😋
Ingredients
1 ½ cups plus
1 tbsp all purpose flour
2 tsp baking powder
3 large eggs
1 cup granulated sugar
1 cup plain yogurt or sour cream
½ tsp salt
½ tsp vanilla
½ cup vegetable oil
2 tsp lemon zest
1 ½ cups fresh or frozen blueberries
Lemon Glaze/Syrup:
2 to 3 tbsp lemon juice
1 cup sifted confectioner’s sugar
Instructions
Preheat the oven to 350*
Grease the sides and bottom of a loaf pan
Sift together all dry ingredients for the bread
In a large bowl, mix together all the moist ingredients
Slowly add in the dry ingredients
In a separate bowl, add the tbsp of flour to the blueberries and fold gently into the batter
Pour the batter into the prepared pan
Bake for 50 to 55 minutes. If a toothpick comes out clean the bread is done
Remove from the oven and let cool for 10 minutes
Remove loaf from pan and allow to cool on a cooling rack
In a small saucepan on low heat, add the powdered sugar to the lemon juice and let it dissolve. Simmer for 3 minutes
Using a toothpick, poke holes all over the loaf, top and sides
Use a pastry brush to brush the lemon syrup on the top and the sides.
Let harden for 15 minutes before serving

A father used to say to his children when they were young: —When you all reach the age of 12 I will tell you the secret of life. One day when the oldest turned 12, he anxiously asked his father what was the secret of life. The father replied that he was going to tell him, but that he should not reveal it to his brothers.

—The secret of life is this: The cow does not give milk. "What are you saying?" Asked the boy incredulously. —As you hear it, son: The cow does not give milk, you have to milk it. You have to get up at 4 in the morning, go to the field, walk through the corral full of manure, tie the tail, hobble the legs of the cow, sit on the stool, place the bucket and do the work yourself.

That is the secret of life, the cow does not give milk. You milk her or you don't get milk. There is this generation that thinks that cows GIVE milk. That things are automatic and free: their mentality is that if "I wish, I ask..... I obtain."

"They have been accustomed to get whatever they want the easy way...But no, life is not a matter of wishing, asking and obtaining. The things that one receives are the effort of what one does. Happiness is the result of effort. Lack of effort creates frustration."

So, share with your children from a young age the secret of life, so they don't grow up with the mentality that the government, their parents, or their cute little faces is going to give them everything they need in life.

“I am a third generation farmer. Right now I am stacking our hay with a Pro Ag Bale Stacker. I work with my Dad and we put up 1500 ton per year on 300 acres of alfalfa.
Farming is 6 or 7 days a week, all year long, about the time you think you are done for the summer there are cows in the feedlot to feed all winter. We raise about 380 head, it varies every year. I left the farm after high school and was gone 10 years. I came back to raise a family. I didn’t want to raise kids in town. My boys see all the hours I put in and the amount of work there is to do and they aren’t sure they want to farm. It’s not for everyone, you work all the time and don’t make a lot of money. You have to do this because you love this way of life. You have to enjoy producing something whether its hay or beef. I wouldn’t trade living in the city for living out here.”

Whatever you do, DO NOT let your kids join 4H and show animals.

Your summer will be spent in the barn. You will have to spend time together and help each other. You’ll have to learn and grow together. The whole family will learn patience. You will sweat, work hard, possibly yell and overcome it all together. There will be no time for movies, Netflix, tv or tablets. You will instead have to spend time talking to each other and working through problems together like facing fears, building confidence, bracing a lamb, clipping a calf, managing a budget and learning about nutrition.

At the end of the summer, you’ll be soo nervous watching your kids show their project. They will learn how to control their nerves in HARD situations and so will you. They will learn how to win humbly and lose graciously. Your kids will make new friends and learn skills to last them a lifetime.

In the end, you’ll all probably be sad. All the hard work you’ve done all summer is OVER. Projects are done and gone to market. You might even cry TOGETHER. Maybe it’s because you’ll miss the animals or maybe because you’ll miss the late nights together in the barn. It might even be because you are beyond proud of what you have accomplished together.

We only get 10 of these summers together in 4H - don’t waste them ❤️ 🍀

Join us for our 13th Annual Home Grown Farm Tour August 27, 2022. We are partnering with Naturally Meramec to host "A Taste of Washington County" from 10 AM - 3 PM at the Town Square in Potosi. There will be booths featuring locally grown and hand crafted products. If you want a booth contact [email protected].
You can visit 10 venues on the self-guided 2022 Farm Tour starting at the Farmer's Market at the Court House where you pick up your map. Participating venues are: Weeks Funny Farm, Chicken & the Hare, Trace Place, Old Caledonian Farm B&B, Wright Family Homestead, Valley R-VI School Farm, Hillside Vineyard & Orchard, Pinery Creek Homestead and Edg-Clif Farm & Winery. The benefit picnic this year features a whole pig roast plus locally made cheese, wine, sausage, pickles, bread, veggies and cobblers. Picnic baskets feed 2 people and cost $80 and can be picked up at Edg-Clif Farms at 5:30 Saturday afternoon. Proceeds go to small farm grants and ag scholarships. Reservations are required at 573-438-8555 and limited to 60 baskets.
Over the past 12 years we have awarded $14,000 to local ag students and small farms across the region. Please come out and support this great event that's fun for the whole family.
