We’ve got a new arrival on our produce list: knotw**d!

This invasive w**d that love, has edible early spring shoots and leaves, which have been described as a cross between asparagus and rhubarb.
Mature shoots are much tougher and need to be peeled before eating and can be eaten raw, grilled, sautéed, pickled and more.
**d can also be used in pies, soups, aspics, sauces, jams, and chutneys, as many are doing as they embrace foods. Its sour taste is often compared to rhubarb and can be substituted in recipes.

This being said, I would like to mention that as with any new foods that you wish to try, it is best to introduce Japanese knotw**d slowly into your diet in small amounts.
The most important thing is that you trust your body, and go slow with incorporating any new plants into your diet!

And don’t forget to enjoy!

Japanese quince, is currently becoming more and more popular in European kitchens. The fruits of this unusual shrub are valued mainly because they remain fresh long after picking and for having a strong and pleasant aroma that will keep your kitchen smelling dreamy for weeks. Unfortunately, ripe fruit is hard, with a tart and sour taste and that’s why they are not eaten raw and must be processed before consumption.
In my kitchen, I use quince fruit to make jellies, jams, chutneys and lemonades. You can also make ice cream, liqueur and wine. Dried, candied fruits are a delicious snack and simple dried fruit mixed with herbs or other fruit, makes flavorful and tasty tea.
Japanese quince fruits have relatively strong antioxidant properties, are low in simple sugars and rich in fiber, have a high content of vitamin C, and compared to other fruits, quince is one of the richest in iron content. They are also rich in organic acids, which help support the immune system.
But despite all this goodness they contain, let me be honest, I only tried them the first time just because they are ridiculously cute! Mini quinces are the best.

We are a little late posting about this wonderful delight, but since it is still so nicely in the , it is worth talking about it for a bit.

The season for (Allium Ursinum) starts in February and goes through to April, but during cold you can still find it even in May, as it is the case this year.

Wild garlic is one of the first wild plants available, so I can barely wait for its season to start – a rather short season as the leaves are especially big on flavor before too many flowers appear. The taste resembles regular garlic but it is and .

Did I mention its benefits? It is said that wild garlic is an immune booster because of high levels of C; moreover, it’s supposed to be -inflammatory, to lower blood pressure and to help with .

Now let’s talk about the endlessly versatile leaves: For example, they are great as (substituting basil), in cheese, as addition, in a , with , or as an alternative to . By the way, not only the are perfectly edible, but also the and the , which make an appealing addition to a .

Like most or wild foods, wild garlic is most and -dense if used or mildly heated; if you’re going to use it , add it to the dish just before it’s done. And don’t forget to !
