Have you ever thought about growing amaranth? 1 cup of amaranth greens only has 6 calories but it gives you 267% of your recommended daily amount of Vitamin K, 21% of your RDA of Vitamin C, and 13% of your RDA of manganese. The raw amaranth seeds give you 82% of your RDA of iron, 52% of your RDA of fiber, 31% of your RDA of calcium, and 28% of your RDA of potassium. If that's not a superfood I'm not sure what is! It's January but there are certain crops that you can get away with growing now! Green leafy vegetables are some of the easiest things to grow, and some of the most nutritious. Kale is packed with Vitamin K, Vitamin A, and it even gives you a fair bit of calcium. Houseplants help you breathe better! When you breathe, your body takes in oxygen and releases carbon dioxide. During photosynthesis plants absorb carbon dioxide and release oxygen.
This opposite pattern of gas use makes plants and people natural partners.
Adding plants to interior spaces can increase oxygen levels as well as purify the air in your home.
Research done by Kansas State University showed Increased oxygen levels sharpen focus, lowers blood pressure, and boosts the immune system.
They also found that in hospital rooms where there were plants patients requested less plain medication, experienced less fatigue/anxiety, and were released from the hospital sooner.
According to NASA research, plants remove toxins such as formaldehyde, toluene, xylene, benzene, mold, and trichloroethylene from the air by pulling the contaminants into the soil, where root zone microorganisms convert them into food for the plant.

One crop I look forward to growing again this year is okra! It is extremely productive to the point that during peak season you have to harvest every other day! Okra contains potassium, vitamin B, vitamin C, folic acid, and calcium. It's low in calories and has a high dietary fiber content. Okra has been suggested to help manage blood sugar in cases of type 1 and type 2 diabetes. (But do your own research) Lets get growing!
