Ingredients:
1 log of goat cheese
Fresh Copiana herbs (marjoram, mint, lemon balm, basil, thyme)
Salt
Pepper
Instructions:
Stir the cheese in a bowl with a pinch of salt and a grind of pepper.
Roughly shred the herbs, then mix and add to the cheese.
Create several mini cheese bowls with different herbs
Serve with breadsticks or toasted bread.
Optional: garnish with fresh, edible flowers

🥒 🍉 Sour Patch Watermelon Cucumber Cooler 🍉 🥒
October is here, and we’ve got the perfect drink to celebrate with your Halloween candy and your Copiana cucumbers!
Ingredients:
2 ½ cups watermelon, seeds removed, cut into chunks
½ large Copiana cucumber, peeled and cut into chunks
2 limes, juiced
1 tablespoon honey or agave nectar
3 ounces vodka
Garnishes: Sour Patch Watermelon and cucumber slices
Instructions:
Place a fine-mesh sieve over a large bowl or pitcher.
In a blender, puree the watermelon and cucumber chunks.
Pour mixture through the sieve into the bowl. Use the back of a big spoon or rubber spatula to squeeze all the juice into the bowl.
In a small bowl, stir together lime juice and honey.
Pour the lime juice and honey mixture into the watermelon and cucumber juice, along with vodka. Adjust sweetness with more honey if desired.
To serve, fill two glasses with ice and top each with the cocktail. Garnish with Sour Patch Watermelon and cucumber.

🥒 Cucumber Salad Recipe 🥒
Get ready for some deliciousness! Copiana’s cucumber salad is the perfect low-carb afternoon snack.
Fun fact: We grow cucumbers exclusively in the greenhouse because their vines require daily care and attention!
Ingredients:
Dressing:
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
¼ teaspoon salt
pinch of pepper
¼ cup olive oil
Salad:
2 medium cucumbers, peeled and thinly sliced
⅓ to ½ cup thinly sliced red onion
⅓ cup raw pecans, chopped
½ cup dried cranberries
2 ounces goat cheese, crumbled
Instructions:
Dressing:
Add all the ingredients for the dressing to a small bowl. Whisk vigorously to combine.
Salad:
Add the cucumbers, red onion, pecans, and cranberries to a large bowl. Pour in the desired amount of dressing and toss to combine.
Top with the goat cheese. Serve immediately!

Use your Copiana herbs to season this delicious appetizer. These marinated pearls are such a big hit that they’ll be gone as soon as they’re set out!
Ingredients
8 ounces mozzarella pearls, drained
2–3 tablespoons of freshly chopped Copiana herbs such as basil, chives, rosemary, oregano, or parsley
1 garlic clove (peeled and smashed)
1/2 teaspoon black peppercorns
1/4 teaspoon kosher salt
1/2 teaspoon red pepper flakes
Extra virgin olive oil
Instructions
In a small bowl, combine the mozzarella, herbs, garlic, peppercorns, salt, and red pepper flakes. Pour in enough olive oil to just cover the cheese and gently stir the mixture.
Transfer to an airtight container and marinate in the refrigerator overnight. Let the mozzarella come to room temperature before serving.

Copiana hands out big bunches of kale year-round at our harvests, and people are always asking me how I like to prepare it. There are so many ways to use kale, from throwing it into the air fryer for a chip-like texture to sauteing it as the perfect side dish. But for us, the simple kale salad will always have our heart. This ready-made pantry dish can be whipped up at a moment's notice and is sure to change minds about this leafy green.
Ingredients
● 1 Bunch of Copiana Kale, roughly chopped
● 2 TBSP Olive Oil
● 2 TBSP Freshly Squeezed Lemon Juice
● 1/2 Cup Shredded Parmesan Cheese
● 1/3 Cup Sliced Almonds
● Sea Salt and Black Pepper to Taste
Instructions
Add the kale to a large mixing bowl and drizzle evenly with olive oil.
Using your fingers, massage the oil into the kale for 1-2 minutes until the kale has softened.
Add in the lemon juice, parmesan, and almonds. Toss until evenly combined.
Taste and season with however much salt and black pepper that you'd like!

Copiana's fresh oregano grows so large that cooking through it seems intimidating. We often find ourselves putting it in everything we can before it goes on the drying rack. Recently, we found an easy way to add it to your butter. We love it on grilled cheese with greenhouse tomatoes, spinach, Copiana basil, and brie.
Most Copiana herbs go into butter quite nicely, so feel free to mix and match with whatever herb you brought home with your harvest.
Ingredients:
1/2 Cup Butter, Softened
4 TSP Minced Fresh Copiana Oregano
1-1/2 TSP Minced Fresh Copiana Thyme
1/2 TSP Garlic Powder
Instructions:
In a small bowl, combine the butter, oregano, thyme, and garlic powder. Beat on medium-low speed until mixture is combined.
