We have been busy perfecting new varieties full of amazing flavors. I don’t think most know how much time goes into just one single variety. Since most of these plants are not native to our country, it can take months of trying to recreate their nature in environment. We have spent 2 years on one single plant. There are still varieties that are challenging to get right, but it’s worth it to give the amazing chefs we work with new flavors and textures to work with. Our attention to detail will always be our top priority.

I’ve never loved lady bugs more until I started growing indoors. If you have any plants inside, it’s just a matter of time before mites show up and infest your grow rooms. With no natural predators, they thrive and quickly multiply. By introducing beneficials like ladybugs and lacewings, it balances out the ecosystem. After loosing many plants over the years, I will never go without these amazing insects.

This is hands down my favorite plant to grow and photograph. It’s 6 months old and the mother plant is close to 3 years. It’s often confused with the common jade plant, but they actually aren’t related. It’s full of acidity that actually changes as the sun rises and sets. The only downside is they take a very long time to grow. I’ve never grown anything that has required this much patience. After years of caring for them, we are just now getting close to being able to provide it year round. I’m glad it takes such a long time, it makes you respect the process.

The grow room has felt like a sci-fi movie the last few weeks with our new grow lights. It’s taken 3 years of research to get to a set up that I like. My goal was to perfect how we grow indoors, and to actually respect the art of growing plants. We have lots of new 100+ varieties coming. As always, thank you to all the restaurants we work with. We will continue to grow unique produce you can’t find anywhere else.
