Thrilled to share this delicious creation from Chef Patrick of Happystance, a new breakfast haven opening its doors in June.

A brand new pizza restaurant opened in downtown Fennville. Come check them out and give them some love, Pizza Quest! This is an owner operated establishment. They've got a mushroom pizza with my exotic blend, including: Oysters, Lion's Mane, Shiitake, Maitake, and King Trumpets!

Pearly white oyster:

During the cooler months, my main white oyster is the Polar oyster. It really is incredible. The Polar oyster doesn't do well when the grow rooms go over 55 degrees.

This is when the Pearly White takes over. This is a complex hybrid of an oyster called Mother of Pearl and Elm Z. Mother of Pearl is a Blue Oyster crossed with a Snow oyster.

What's so unique about this mushroom is it starts off blue and matures to a white color. The pictures are in chronological order of start to finish with this mushroom.

It also excels as a very disease resistant oyster mushroom that is practically foolproof in a grow room. When growing mushrooms on a commercial scale, I've learned that you want mushrooms that provide consistent results.

This mushroom among four others is in a unique breeding project to see if we can develop a better mushroom than what's currently on the market. We should start having results in as little as two months.
