Wait! Don't throw out that past date milk! That is money that is being wasted. Make some farmer's cheese instead. Here is the recipe from the videos: milk past date brought to a boil (remember to keep stirring and keep from scalding or burning on bottom of pan), remove from heat, add curdling agent I used cider vinegar (can use distilled vinegar, white vinegar, wine vinegar, lemon juice, lime juice, or other acidic flavor to curdle the milk), stir until all curds are developed. In pre prepared set up bowl big enough to hold all the whey liquid you will be draining from the curds, a strainer set on top of the bowl, and cheese cloth or clean dishtowel draped over the strainer to catch the curds. Take the curds and whey mixture and pour into the cheesecloth or dishtowel, and then squeeze all of the liquid out of it. It is normal for the cheese to stick to the cloth. Once the liquid is out, use spoon to scrape cheese onto clean sanitized surface. Use spoon or clean hands to make sure liquid is out of the cheese. If you are going to use right away you don't need to add salt. In the video today I added salt, Italian seasoning, and dried onion flakes. You can just add salt for preserving or other spices as you desire. Bon appetit!😊
