Hey guys, just to let everyone know so I'm not getting asked the same question over and over again. I only hang the carcasses OVERNIGHT!!! Yes I know that sounds WILD but hear me out, I use 'ELECTRIC STIMULATION' which has much the same effect on the carcass as hanging for 7 days without losing that SHELF LIFE. The whole and solely reason for hanging for 7 days plus is to neutralize the pH in the carcass. 'ELECTRIC STIMULATION' spikes the pH, so rapid INCREASE means rapid DECREASE it has been tried and proven in all major meat abattoirs around the world including TEYS, AMH, and JBS just to name a few(so if you've had any of that meat you've had electric stimulated meat). So within 12hrs after ELECTRIC STIMULATION the pH has been neutralized and the carcass is as tender as it's going to get without decaying. It also has major benefits as it ruduces COLD SHORTENING so we can get your meat down to temperature much quicker with our advanced coldroom set-up. Other benefits are
-MOISTURE RETENTION
-LONGER SHELFLIFE
-BETTER YIELD
-CONTROLLED CHILLING
Just to name a few. We have got this down to fine SCIENCE and we can now move forward with home kills by offering it to YOU our customers without the hassles of looking after a coldroom for a week, losing all the precious shelf life and paying for coldroom hire. We are in one day out the next. Quick, easy and EFFICIENT and offering you the best process for your meat. Hope that all makes more sense and clears the stigma around why I only hang them overnight. Today's time lapse, something a little different 'water buffalo' with a hide that's over an inch thick and are 4 times stronger than an Ox!!! πŸ’ͺπŸ’ͺπŸ’ͺπŸ’ͺ It's the kind of animal you don't want to get on the wrong side of ☠️ Luckily for us the ones we do are quite tame as they are used for training horses, which makes my job a breeze when it comes to dispatching them (stress free animals mean stress free meat) every time I do one I'm amazed that this is my job and what I do for a living πŸ˜‰ pretty blessed I think πŸ‘

This was our second steer for that morning in Cawarral central Qld. This mornings beast just outside Blackall a F1 wagyu steer dressing out a massive 536.75kg with 147kg forequarters, the biggest this year so far!! Hi everyone, what an amazing start to the year with already over 20 cattle processed and 35+ sheep,goats and pigs done already πŸ˜‰ here are some photos of the days so far (one of the biggest goats we've ever had to do!!!)
