…and zucchini flowers

Charlie Vella in Freemans Reach with his family are picking zucchini flowers this week. His granddaughter is seen here helping with the picking.

Zucchini Flowers stuffed Eggplant tomato
Serves 4:

For onions:
• 1 tbs olive oil
• 1/2 red onion, sliced
• 1 tsp brown sugar
• 2 cloves garlic, minced
• 2 x tomatoes, peeled, seeded and diced
• Season with salt and pepper to taste
For Eggplant stuffing:
• 3-4 eggplant, peeled and chopped (Harvest Hub - on special this week)
• 1/4 cup pine nuts (can use cashews as they are nice and creamy too)
• small handful of fresh basil, washed
• 50ml olive oil
• Salt and pepper to taste
To make Balsamic mix:
• Balsamic vinegar, reduced
To make Batter:
• 1/4 cup corn flour
• 1/4 cup plain flour, extra for dusting
• A pinch bi carb soda
• 1 cup heavy beer or substitute - cold water and 1 tsp apple cider vinegar
• 4 x zucchini flowers, stamen removed and zucchini tip trimmed
• Vegetable oil for frying

To Caramelise onions and tomato: Tomato mix
In a small saucepan on low heat put olive oil, onions, garlic and 1tsp brown sugar then caramelise stirring for about 15 minutes. Dice the tomatoes finely and mix with the caramelised onion and some of the oil from cooking the onions. Season and set asside.

To make Eggplant stuffing:
Place eggplant in blender with pine nuts, basil and process until smooth. With the motor still running, drizzle in olive oil in a thin stream through the feeder. Season lightly with salt and pepper.

To make balsamic mix:
In a frypan put a small amount of oil and add balsamic vinegar. Cook on low heat stirring continually for about 5 minutes until it reduces and thickens.

To prepare zucchini flowers:
Stuff about a tablespoon of the eggplant stuffing into the flowers but so you can close them. Close the flowers by twisting the tops together.

To make batter:
In a bowl mix the corn flour, plain flour, bi-carb soda and whisk in beer or substitute water and vinegar.

Then heat frying oil in a wok or fry pan to hot.
Place flour on a plate, then lightly dust the flowers with flour, dip into the batter then fry for about 1 minute until coloured slightly. Scoop out and drain on kitchen paper.

To Plate the dish:
Place a spoonful of Tomato mix in the centre of the plate then drizzle balsamic mix over it. Place zucchini flowers on top.

Why do the big 2 supermarkets consistently match each other's high prices? Because they can. But we, the consumer, have the power to choose an alternative. One where we get a better deal and where growers are given a fair price for their produce. A price that ensures our food supply is sustainable.

If you want to stop lining the pockets of big corporations pay less and get fresher produce, check out your local Box Divvy hub here. https://www.boxdivvy.com/join-a-food-hub

Prices as at 6th September.

Mount Zero Olives Extra Virgin Olive Oil - plus Olives and Verjus

🫒 🫒 🫒

You may have noticed that we’re running low on Olive Oil, with both Beerenberg and H2G out-of-stock. They won’t be back until the new harvest comes out in October.

We were anticipating this, so we’ve been on the hunt for good value Australian EVOO, and found it in Victoria: Mount Zero grows their own olives in the Grampians – and press and bottle it in-house. As many members have been asking for a larger size bottle, we’ve opted for a 2-litre cask – for 2 reasons:

🫒Better value than 500ml bottles: we’re selling it for $26 a litre
🫒The cask will preserve the oil more effectively, as no light or air can reach the oil – so even if you are a light user, this cask will go the distance.

By-the-way this is no ordinary oil: the variety is called Frantoio.
In the words of Mount Zero:
“...𝒆𝒙𝒕𝒓𝒂 𝒗𝒊𝒓𝒈𝒊𝒏 𝒐𝒍𝒊𝒗𝒆 𝒐𝒊𝒍 𝒘𝒊𝒕𝒉 𝒂 𝒍𝒐𝒗𝒆𝒍𝒚 𝒔𝒂𝒗𝒐𝒖𝒓𝒚 𝒏𝒐𝒔𝒆 𝒂𝒏𝒅 𝒏𝒐𝒕𝒆𝒔 𝒐𝒇 𝒃𝒊𝒕𝒕𝒆𝒓 𝒈𝒓𝒆𝒆𝒏𝒔 𝒂𝒏𝒅 𝑱𝒆𝒓𝒖𝒔𝒂𝒍𝒆𝒎 𝒂𝒓𝒕𝒊𝒄𝒉𝒐𝒌𝒆 𝒘𝒊𝒕𝒉 𝒂 𝒃𝒂𝒍𝒂𝒏𝒄𝒆𝒅 𝒃𝒊𝒕𝒕𝒆𝒓𝒏𝒆𝒔𝒔 𝒂𝒏𝒅 𝒔𝒐𝒇𝒕 𝒕𝒆𝒙𝒕𝒖𝒓𝒆. 𝑨 𝒗𝒆𝒓𝒔𝒂𝒕𝒊𝒍𝒆 𝒐𝒊𝒍 𝒕𝒉𝒂𝒕 𝒄𝒂𝒏 𝒃𝒆 𝒖𝒔𝒆𝒅 𝒇𝒐𝒓 𝒂𝒍𝒍 𝒂𝒑𝒑𝒍𝒊𝒄𝒂𝒕𝒊𝒐𝒏𝒔 𝒊𝒏𝒄𝒍𝒖𝒅𝒊𝒏𝒈 𝒇𝒓𝒚𝒊𝒏𝒈, 𝒇𝒊𝒏𝒊𝒔𝒉𝒊𝒏𝒈 𝒚𝒐𝒖𝒓 𝒇𝒂𝒗𝒐𝒖𝒓𝒊𝒕𝒆 𝒅𝒊𝒔𝒉𝒆𝒔, 𝒂𝒔 𝒑𝒂𝒓𝒕 𝒐𝒇 𝒂 𝒎𝒂𝒓𝒊𝒏𝒂𝒅𝒆 𝒐𝒓 𝒆𝒗𝒆𝒏 𝒂𝒔 𝒂 𝒃𝒂𝒔𝒆 𝒊𝒏 𝒉𝒐𝒎𝒆𝒎𝒂𝒅𝒆 𝒑𝒆𝒔𝒕𝒐. 𝑰𝒕𝒔 𝒇𝒍𝒂𝒗𝒐𝒖𝒓 𝒑𝒓𝒐𝒇𝒊𝒍𝒆 𝒊𝒔 𝒅𝒆𝒔𝒄𝒓𝒊𝒃𝒆𝒅 𝒂𝒔 𝒎𝒆𝒅𝒊𝒖𝒎 𝒇𝒓𝒖𝒊𝒕𝒊𝒏𝒆𝒔𝒔, 𝒃𝒂𝒍𝒂𝒏𝒄𝒆𝒅 𝒃𝒊𝒕𝒕𝒆𝒓𝒏𝒆𝒔𝒔 𝒂𝒏𝒅 𝒎𝒐𝒅𝒆𝒓𝒂𝒕𝒆 𝒑𝒆𝒑𝒑𝒆𝒓𝒊𝒏𝒆𝒔𝒔. 𝑰𝒕 𝒊𝒔 𝒄𝒐𝒍𝒅 𝒑𝒓𝒆𝒔𝒔𝒆𝒅 𝒂𝒕 𝒓𝒐𝒐𝒎 𝒕𝒆𝒎𝒑𝒆𝒓𝒂𝒕𝒖𝒓𝒆 𝒋𝒖𝒔𝒕 𝒉𝒐𝒖𝒓𝒔 𝒂𝒇𝒕𝒆𝒓 𝒉𝒂𝒓𝒗𝒆𝒔𝒕 𝒕𝒐 𝒆𝒏𝒔𝒖𝒓𝒆 𝒑𝒓𝒆𝒎𝒊𝒖𝒎 𝒒𝒖𝒂𝒍𝒊𝒕𝒚”.

In addition to oil, why not also sell their olives?

They come in several varieties:
A range of 80g pouches, with different olive varieties marinated in oil and herbs.
Mixed olives in 300g and 2kg jars.

𝗧𝗵𝗲 𝗼𝗹𝗶𝘃𝗲𝘀 𝗿𝗮𝗻𝗴𝗲 𝘄𝗶𝗹𝗹 𝗯𝗲 𝟲% 𝗼𝗳𝗳 𝗳𝗼𝗿 𝘁𝗵𝗲 𝗻𝗲𝘅𝘁 𝟮 𝘄𝗲𝗲𝗸𝘀 (𝘂𝗻𝘁𝗶𝗹 𝗼𝗿𝗱𝗲𝗿𝘀 𝗱𝗲𝗹𝗶𝘃𝗲𝗿𝗲𝗱 𝗼𝗻 𝟭𝟯𝘁𝗵 𝗦𝗲𝗽𝘁𝗲𝗺𝗯𝗲𝗿).

Oh, and they have Verjus - pronounced vehr-ZHOO (or Verjuice as it’s often spelled in Australia): pressed from young, unripe grapes, it’s often used in cooking for when the recipe asks for vinegar or lemon juice. Verjus can give your dish a depth of flavour that’s different from anything else.
More about Verjus in a few weeks’ time.

All Mount Zero Olive Oil is cold-pressed (at room temperature) just hours after harvest to maintain premium quality. Similarly, their 100% Australian olive oils come from the first pressing of the olives which is what the term 'extra virgin' refers to.

You’ll find the olives in Pantry ➡️ Snacks & Entertainment ➡️ Olives.
The EVOO and Verjus are in Pantry ➡️ Meal Preparation ➡️ Oil, vinegar and dressing.

English Spinach.

Like all spinach, when I go to order...I order 4 times the amount because, lets face it - it's easy to eat, it wilts down to a quarter of it's size and it's one of those "put it in any meal" type of vegetable.

I put it in:
Smoothies
Muffins
Quiches
Soups
Bakes (chicken, vegetable,pasta)
Pasta
Pesto
Lasagne
Spanakopita
Curries
Salads
Pastries..........everything.

So, where the cold weather is creating the most havoc – from broccoli to cucumbers, sweet potato, beans and zucchini, there are bright spots - broccolini, tomatoes (especially baby truss tomatoes), kale, wombok, leek, cauliflower, beetroot, buk choi, some herbs (especially coriander and parsley), Iceberg lettuce (or any other lettuce for that matter). “And English spinach”, says Simon Chong in Leppington: “$2.30 a bunch!

So let's help Simon and grab a few bunches each this week.

Also known as Lebanese eggplants, these are very similar to the common variety. The main difference is that their skin is slightly more delicate. They are awesome roasted! 🤤

Grab yours this week for 1.13 each, or 5,67$ a kilo. Normally well over 10$ a kilo, it’s definitely a bargain this week! 💰👌🏼🍆

~ New (additional) egg supplier ~

Hunter Valley Eggs will remain our lead supplier but, especially in winter, they’re unable to fill all our orders on their own.

So we’ve found another egg supplier to help keep up with demand - Moonbi Valley Eggs, based near Tamworth.

Their stocking density is 10.000 hens per HA, similar to Pace Eggs.

Supply from Moonbi Valley Eggs will start this week.

Limit

H2G $2 Passata with a Best Before Dateof 31 Aug: limit of 2 jars per member. Just spreading the love: the Friday hubs would like some too..

Honest to Goodness came to our new warehouse last month, and realised that 3500 sqm is a LOT of space. So, when they ended up with a few pallets of Passata with a Best Before Date of 31 August, who were they going to call??

“We’ll take ‘m”, we said. Over 1500 jars that we normally sell for $4.49 – but are now going out the door for $2 a pop.

We think they’ll be gone in a fortnight – well before they have a chance to expire. BTW: there’s every chance they’ll be good for another year…

Box Divvy’s version of The Soup Pack

The eastern seaboard continues to suffer from a cold snap, so: bring out the soup. And to help you get started, we’re putting together a Soup Pack.

There are plenty of Soup Packs around, but none of them are particularly generous. Take the Coles version: 1 potato, 1 onion, 1 carrot, 1 parsnip, 1 turnip and 1 celery stick – barely 1 kilo of hard vegetables to make stock, priced at $4.90.

The Box Divvy version weighs at least 1.5kg, and costs $4.76. Weight for weight, that’s 35% cheaper than the Coles version.

You’ll find them in Vegetables ➡️ Other

👨‍👩‍👧‍👦The capsicum family is reunited 🫑💛❤️

We have added yellow capsicum in the marketplace this week! 🎉

🤔Don’t know which one to pick? Here’s a simple guide:

💚Green has the most bitter taste, so it’s great cooked in a base for a meal, such as chili con carne or a good old spaghetti sauce.

💛Yellow has a mild sweet taste to it, making it perfect for dips or to add some color in your dishes, such as stir fries and curries.

❤️Red has the most beta carotene and vitamin C. It’s also the sweetest. They are also great raw in a dip or in a salad, grilled or in any cooked meal (roasted capsicum makes amazing soup!)

What will you be cooking with them this week? 👩🏼‍🍳
