C H E S T N U T S -
this fantastical mushroom has a rich, moorish, umami taste and a surprising texture, with a uniquely crunchy stem and a thin slightly slippery cap. The crunch on the stem is such a stand out texture, it’s not squishy at all. That shape and texture holds up even when cooked!

Chestnuts are quite finicky to grow and do take nearly three times as long as our oysters so they do cost more to grow, but they’re worth every bit. When these amber beauties are available, we recommend taking advantage of it. They’re perfect sautéed, stand outs in rich brothy numbers, easily elevate any kind of mushroom dish and are a delicious finishing move.

Our ‘Wild Blue’ oyster grows only in cold temperatures so we’re bringing it back for this winter/spring season! This oyster is one of our favourites to look at with its delicate baby blue caps that overhang like scalloped curtains above the thin crunchy white stems. The flavour is mild and earthy much like a white oyster.

Pink oyster - the bacon mushroom. Yes, bacon. 🥓
It’s gorgeous to look at and tastes like ham but you’ll never see it at the grocery store. The good news is that you can easily grow it yourself at home in about a week! Enjoy watching the mesmerising growth then harvest and crisp it up in a pan to see if it tastes like bacon to you.

If you want to make next level vegan mushroom bacon, try this:
250g pink oyster mushroom from your harvest
2 tablespoons soy sauce or tamari
1 teaspoon liquid smoke
2 tablepoons maple syrup
½ teaspoon smoked paprika
¼ teaspoon black pepper
1 tablespoon olive oil
- cook oyster mushroom caps dry in a single layer in a frying pan over low heat. Put a weight on top such as another pan pressing down.
- after 3 or so minutes flip the mushrooms and put the weight back on. Cook for another couple of minutes.
- stir together the remaining ingredients and brush over the mushrooms, flip the mushrooms and brush on the other side. Cook 1-2 minutes, flip and finish cooking for another minute on the other side until nice and crispy. Season with salt.
Enjoy the crispy bacon-y mushroom goodness!

True AUSTRALIAN GROWN shiitake…
👉⁉️Why does this matter? Becuase chances are if you’ve had shiitake here in Australia, it’s been imported. You may say “But it’s got the green and gold triangle logo” or says “Grown in Australia” on the plastic wrapped package. Well sorry to tell you, but you’ve been misled and it’s a big problem. You see, mushrooms are unique in that they can start off their life cycle made up in bags and then they have a few weeks of inoculation time until they fully grow… therefore the bags can be completely made in one country, then be shipped across the ocean for a few weeks before being opened here in Australia. Wild huh? Overseas water, overseas materials, overseas cheap labour and mass producing overseas farms, but when exposed to Australian air it’s now called Australian grown. Not only is this questionable quality with also the potential for heavy metals, it also floods the market with cheap produce that Aussie farmers can’t compete with. We’ve seen in the last few months mushroom farms sadly close because of this.
🇦🇺🍄So we encourage you to know who your mushroom farmers are in your area, to make sure what you’re eating is good for you and supports true Aussie farmers. It tastes SO much better too!! But don’t take our word for it, try these shiitake and you’ll see how these buttery, umami rich, succulent favourites are next level and absolutely worth the extra buck.

So cute and fluffy it’s irresistible to touch but if you haven’t cooked with this mushroom, you need to! The texture when cooked, especially when it’s pressed down with a weight or heavy pan on top, becomes like protein! The flavour is mild so it takes on whatever spices you throw at it while still having that underlying moorish umami. Sear it and bbq to make a juicy steak. Tearing it finely and tossing in a pan with butter and garlic will fool you into thinking it’s spanner crab. Cut it up and add it into a curry for luscious meaty bites. Fry it Kentucky style and it will give the dirty bird a run for its money.

That’s why we say lions mane is surprisingly the most versatile mushroom you need to be cooking with!

Give us the cheese! That’s the message when we tuck in our inoculated substrate for some incubation time, and wait patiently for the colonisation process to happen before we can reap the benefits of our lab work as delicious mushrooms! Turning a long empty warehouse into a farm had its very strange and trippy surprises, with this artwork being one of them. Twisted graffiti messages were across the walls so we painted over all of it… except for this mouse one. It’s so odd and vibrant, it looks like it’s eagerly watching over the growing mycelium. It’s our nod to the warehouse’s past and we think it brings a bit of that oh so Valley charm.

This is a snowflake aka coral tooth mushroom! This unique looking mushroom is native to Australia and is in the lions mane family which means it has comparable taste and health benefits, but instead of hair it grows branchlike structures. It is slightly more firm in texture than lions mane so it holds its branchlike shape when cooked, or it can be used raw as a garnish on top of a dish, giving a punch of wow-factor.

Mushroom city.

Imagine looking up and seeing mushrooms towering above amongst the city’s reaching concrete towers and overhangs. The organic details of nature’s structure are contrasted by the man made yet they seem reminiscent of each other. This is what happens when growing mushrooms in the city becomes the city in a colossal art installation that is now featured as part of the exhibition Make Visible in Brisbane's outdoor gallery.

Making the micro 'macro', this photograph urges you to look closer, peek down the laneway and walk nearer to reveal the wonder of the overlooked and often unseen. The mushrooms at this scale mimic the overstory that creates a canopy underneath where people can walk or sit. The ascending fruiting forms also mirror that of a cityscape and the buildings towering overhead.

We were honoured to be chosen for the Make Visible project which aims to celebrate the hidden elements of the city with unusual collaborations such as this with . Its about the invisible elements that connect communities, much like mycelium, that are contributing to the city's unique ecology.

The collaboration is with Urban Valley Mushrooms in Fortitude Valley and Kate O'Sullivan, a Brisbane-based filmmaker and photographer drawn to stories that reveal magic in the everyday and champion connectedness in the face of the void.

This artwork is one of the unlikely collaborations brought together as part of the Make Visible exhibition which runs from now until April 14th. Check out ‘Canopy’ (2023) in Giffin Lane off Adelaide St in the Brisbane CBD.

Mycelium becomes her.

Imagine what mycelium would look like if it took human form, the sprawling nature, intriguing shapes, whimsical patterns, the pleated gills of the fruiting body and its wavy unfurling caps. This is what happens when fashion crosses farming for an inspired art installation that is now featured as part of the exhibition Make Visible in Brisbane’s outdoor gallery.

We were honoured to be chosen for the Make Visible project which aims to celebrate the hidden elements of the city with unusual collaborations such as this with
Its about the invisible threads that connect communities, much like mycelium, that are contributing to the city’s unique ecology.

This kinetic garment sculpture ‘Cultivar’ takes inspiration from the mesmerising growth and reaching spread of mycelium through substrate, and the beautiful sculptural forms of the oyster mushrooms grown by Urban Valley. Designed to be seen in motion, whether on or off the body, this work is evocative of the imperceptibly incessant growth of mushrooms, but also alludes to the mobile, adaptive and resilient creative communities of our city.

Bulley Bulley is a fashion label run by sisters Bianca and Kiara Bulley. As designers they have a fascination with fashion, wearing stories and history, and how that can be evident in clothing, textiles and the design processes. They enjoy playing with what fashion is, can be, and the ideas that come out of experimenting together.

The Make Visible exhibition runs from now until April 14th 2024. Find the mycelial masterpiece ‘Cultivar’ in motion at the Edward St end of Queen Street Mall.

Announcing our biggest event yet! We’re so excited to partner with our neighbour, the epic BrewDog Fortitude Valley, for a full fungi degustation! Feast on 7 x decadent courses that champion a variety of our unique seasonal mushrooms in a delicious journey of flavours. Our inconspicuous urban farm is located directly behind BrewDog, making this truly the most farm to table dinner in the Valley! You can even opt in for a tour of the farm and “forage” through the fruiting room for an up close experience of what you’ll be tasting.

🍄 [OPTIONAL] FORAGE EXPLORATION 6pm-6.30pm
Take an exclusive tour of our Urban Valley mushroom facilities, with owners Joel and Rachel. Challenge the way you think about farming, with a run through of their growing process, mushroom strains, storage and growth facilities.
The tour runs for 30 mins from 6pm before the degustation @ 6.30pm. Limited availability.
