Just been visiting the incredibly flourishing vegetable and herb garden at Highfield Equestrian Centre. WOW.
This place is more than a fabulous equestrian centre ,it’s a hidden gem , where you can be notified of what’s available to be picked , on request.or simply ask when next you visit this intriguing location, with your horse, or not ,if you just would like some home grown fresh produce 🥬🌶️🥔🥦🥚
The free roaming chickens were most well behaved and I purchased a few dozen of their fabulous fresh eggs.🥚perfection 🙏these are usually available on most days. Preorders are advised as they sell out very quickly.
Zucchini is really in season and the much prized zucchini flowers are ready to be picked , stuffed with your own delicious ingredients, these are a a must for your next antipasto platter.
I purchased both flowers and a stunning medley of fresh zucchini to make a delightful zucchini, basil and Parmesan soup.
It’s perfectly light and tastes of summer with its simple seasonal ingredientsfresh and fabulous broad leaf Italian rocket was a gobsmacking surprise. Loaded with that peppery , bitter rocket flavour. Drizzled with your favourite olive oil and a shaving of freshly grated parmagiano 🧀

Zucchini Basil and Parmesan soup.
60ml olive oil
Tablespoon of chopped garlic
Good handful fresh basil. I use lots.
A kilo of freshly picked zucchini
750ml chicken stock
60 ml poring cream
Chopped flat leaf parsley
Lashings of freshly grated Parmesan
Salt flakes and cracked black,pepper
I also enjoy a fresh grating of nutmeg to finish.
Sauté the garlic, basil and zucchini until lightly browned and soft., add salt
Pour in stock and pepper, Cook until all ingredients are amalgamated and tender. About 8/10 minutes.
Remove from heat, blend until smooth
Add cream, parsley and Parmesan and reheat
Serve with nutmeg and more Parmesan if desired., with crusty bread .
A stuffed zucchini flower alongside is a most delicious accompaniment.
