HeepsGood Veggie Pitas with Hummus
This delicious snack is also incredibly healthy too! According to a 2012 study conducted by the Agricultural Research Service (ARS) from the U.S. Department of Agriculture (USDA) together with researchers from the University of Maryland, Mixed Radish Microgreens are an excellent source of vitamins A, C, E, and K, along with calcium, iron, and dietary fiber. AND they also contain high levels of antioxidants that can help reduce inflammation in the body! So eat up!
For four delicious servings
You will need…
✅ 100g mixed radish microgreens
✅ 2 tablespoons minced fresh parsley
✅ 1 teaspoon grated lemon zest
✅ 2 tablespoon lemon juice
✅ 1/4 teaspoon salt
✅ 1/4 teaspoon black pepper
✅ 3 tablespoons olive oil
✅ 2 carrots, peeled and shredded
✅ 4 radishes, trimmed, halved, and thinly sliced
✅ 1/4 cup thinly sliced red onion
✅ 4 pita pockets
✅ 1 cup hummus
✅ 2 tomatoes, thinly sliced
✅ 2 avocados, thinly sliced
How to make it…
1️⃣ In medium sized bowl, whisk together parsley, lemon zest, lemon juice, salt, pepper, and olive oil.
2️⃣ Toss in shredded carrots, radishes, and red onion.
3️⃣ Then assemble! Spread hummus inside pita pockets, then layer with tomatoes, avocados, mixed radish microgreens, and radish mixture.
4️⃣ Serve!

You can also substitute mixed radish microgreens with broccoli microgreens, which are also packed with nutrients, and have great health benefits.
