HeepsGood Veggie Pitas with Hummus

This delicious snack is also incredibly healthy too! According to a 2012 study conducted by the Agricultural Research Service (ARS) from the U.S. Department of Agriculture (USDA) together with researchers from the University of Maryland, Mixed Radish Microgreens are an excellent source of vitamins A, C, E, and K, along with calcium, iron, and dietary fiber. AND they also contain high levels of antioxidants that can help reduce inflammation in the body! So eat up!

For four delicious servings
You will need…

✅ 100g mixed radish microgreens
✅ 2 tablespoons minced fresh parsley
✅ 1 teaspoon grated lemon zest
✅ 2 tablespoon lemon juice
✅ 1/4 teaspoon salt
✅ 1/4 teaspoon black pepper
✅ 3 tablespoons olive oil
✅ 2 carrots, peeled and shredded
✅ 4 radishes, trimmed, halved, and thinly sliced
✅ 1/4 cup thinly sliced red onion
✅ 4 pita pockets
✅ 1 cup hummus
✅ 2 tomatoes, thinly sliced
✅ 2 avocados, thinly sliced

How to make it…
1️⃣ In medium sized bowl, whisk together parsley, lemon zest, lemon juice, salt, pepper, and olive oil.
2️⃣ Toss in shredded carrots, radishes, and red onion.
3️⃣ Then assemble! Spread hummus inside pita pockets, then layer with tomatoes, avocados, mixed radish microgreens, and radish mixture.
4️⃣ Serve!

Notes…
You can also substitute mixed radish microgreens with broccoli microgreens, which are also packed with nutrients, and have great health benefits.

You will need…

✅ 1 banana
✅ 1 green apple, cored and rough chopped

Packed with healthy ingredients, overflowing with Vitamins A, B, C, E and K. Most importantly, this smoothie is delicious!

For one delicious serving

You will need…
✅ juice of 1 orange
✅ 1 medium banana
✅ 2 tbsp peanut butter (natural with no added sugar or salt)
✅ 1 tbsp maca powder
✅ 1 tbsp wheatgrass powder
✅ 1 cup milk (or other non-dairy milk alternative)
✅ 1 packed cup pea shoots
✅ 1 - 2 tsp maple syrup (optional)

How to make it…

HeepsGood Mixed Berries & Pea Shoot Smoothie.

For one delicious serving
You will need…
✅ A large handful of HeepsGood pea shoot microgreens
✅ 1.5 cups of coconut water
✅ 1 cup of frozen mixed berries
✅ 2 tablespoon peanut butter
✅ Honey, or maple syrup (optional)

How to make it…
1️⃣ In a blender, add pea shoot with 3/4 cup coconut water and blend everything together.
2️⃣ Add frozen mixed berries and peanut butter with remaining coconut water.
3️⃣ Add honey or maple syrup if you like sweeter smoothies, and blend again till smooth and creamy

Notes…
Instead of coconut water, you can use dairy or non-dairy milk.
Peanut butter can be substituted with other nut/seed butter such as almond, sunflower butter, tahini
To add creaminess, banana or avocado can be used

Seriously, what kind of person would eat a mushroom that looks like this? Well, we here at HeepsGood would actually, thankyou very much. And we are in good company! This variety is highly sought after in Japan for it's delicious umami flavour, and is a favourite ingredient in Japanese soups.

This plucky little bunch of organically grown mushrooms was harvested today at our farm in Coburg North, and is commonly known as the Yellow Oyster Mushroom, and less commonly by it's proper name - Pleurotus citrinopileatus. Come and get some!

Stir Fried HeepsGood Pea Shoots with Garlic

Ingredients
✅ 500 g HeepsGood pea tendril microgreens
✅ 3 cloves thinly sliced garlic (or more, depending on your preference)
✅ 2 tbsp cooking oil
✅ 1/2 tsp salt, or to taste
✅ 1 tsp chicken bouillon (or substitute with chicken/vegetable stock)

Instructions
1️⃣ Add the oil into the wok using a high heat.
2️⃣ Turn the heat down to medium and throw in the garlic to avoid burning.
3️⃣ Bring the heat up to high and throw in the pea shoots, chicken bouillon powder and salt.
4️⃣ Stir for 1-2 minutes (or until slightly wilted) then plate immediately.
5️⃣ Serve with a bowl of rice and enjoy!

Notes
As with every stir fry, make sure the wok is HOT. You don’t want to boil the pea shoots and end up with a soggy plate of vegetables.
Fry the pea shoots as best you can before stir frying. A little moisture is fine, but you need it as dry as possible to avoid steaming it.
Be quick with your hands. Stir vigorously to evenly cook all the pea shoots.
Turn the heat down to low before adding in the garlic to stop any burning. Burnt garlic will add unnecessary bitterness to this dish. Increase the heat back up to high before adding in the pea shoots.

✅ 1/2 cup 𝗛𝗲𝗲𝗽𝘀𝗚𝗼𝗼𝗱 𝗺𝗶𝘅𝗲𝗱 𝗺𝗶𝗰𝗿𝗼𝗴𝗿𝗲𝗲𝗻𝘀

✅ 1 mango, peeled and cut into chunks
✅ a 1-inch piece of fresh ginger root, peeled and chopped rough
✅ juice from 1 lemon
✅ 5-6 coconut water ice cubes (you can also use water ice cubes)

𝐁𝐫𝐨𝐜𝐜𝐨𝐥𝐢 𝐒𝐩𝐫𝐨𝐮𝐭 𝐒𝐦𝐨𝐨𝐭𝐡𝐢𝐞
I realise that the name of this smoothie isn’t the most appetising or enticing, but I promise that it tastes like a milkshake. Well, maybe a healthy milkshake. If you want it to be sweeter, you can throw in 1-2 pitted dates.

𝘽𝙧𝙤𝙘𝙘𝙤𝙡𝙞 𝙢𝙞𝙘𝙧𝙤𝙜𝙧𝙚𝙚𝙣𝙨 are the key to this smoothie – we grow them here at HeepsGood!

H**p seeds add plant-based protein and nutrition to this recipe, plus creaminess once they get fully blended.

Frozen berries and frozen banana add natural sweetness and thickness.

Cocoa powder adds a bit of a chocolate flavour and helps to cover any bitterness from the broccoli sprouts.

Baby spinach adds a little more nutrition and helps give the smoothie its distinctive green colour.

𝗥𝗲𝗰𝗶𝗽𝗲 𝗦𝘁𝗲𝗽𝘀
1️⃣ Combine your water, h**p seeds, frozen fruit, broccoli sprouts, and cocoa powder in the base of your high speed blender. I recommend a Blendtec or a Vitamix.

2️⃣ Turn the blender up to high and let it run for 30-45 seconds, or until everything is fully combined and creamy.

3️⃣ Pour and serve!

For two delicious servings…

𝗬𝗼𝘂 𝘄𝗶𝗹𝗹 𝗻𝗲𝗲𝗱…
✅ 650 grams of HeepsGood oyster mushrooms
✅ 2 teaspoons of olive oil
✅ 1 teaspoon of soy sauce
✅ 1 tablespoon of butter
✅ 1 clove of garlic, minced
✅ fresh parsley or herbs of your choice, chopped
✅ A little salt, and pepper to taste

𝗛𝗼𝘄 𝘁𝗼 𝗺𝗮𝗸𝗲 𝗶𝘁…
1️⃣ First, wipe the oyster mushrooms with a damp paper towel, or rinse very quickly under running water (not too much because they absorb water quickly)
2️⃣ Cut your HeepsGood oyster mushrooms into individual mushrooms (and cut in half, or thirds if they are large). You can remove about ½ of the bottom stem, as they can be a little woody
3️⃣ Preheat olive oil in a skillet over medium heat. Toss your HeepsGood mushrooms with soy sauce and add to the skillet
4️⃣ Stir to gently coat with oil and then allow mushrooms to cook 3-4 minutes without stirring or until browned on one side. Stir and continue cooking until mushrooms are tender, for another 2-3 minutes
5️⃣ Push the mushrooms to one side and add the butter and garlic to the pan. Cook for 30 seconds or until fragrant. Stir the mushrooms into the garlic butter and cook for approximately 1 minute more.
6️⃣ Season with parsley, salt & pepper to taste.

The substrate used to grow this beautiful bunch of Shimeji mushrooms was comprised of used coffee grinds, collected from a local cafe, and mixed with the waste produced from growing HeepsGood microgreens! Fried in olive oil, glazed in garlic, rosemary and thyme butter and dunked in this sauce:
1/2 cup of sour cream
1/2 cup mayonnaise
1 Tbsp lemon juice
1 Tsp Dijon mustard
1/2 Tsp garlic power
1 Tsp Thyme
1/8 Tsp cayenne pepper
1/8 Tsp pepper
