We have been blessed with a ripper season so far and our oysters are absolutely incredible right now.

All oysters sold unshucked. Recommend Shelf life is 7-10 days from purchase date - DO NOT REFRIGERATE UNSHUCKED OYSTERS, YOU WILL KILL THEM 😢 - this is a live product, best stored in a cool part of the house eg. concrete floor in garage, laundry tiles or in an esky wrapped in a towel with a cold pack. Do not store below 10 degrees.

Minimum 4 dozen orders, all oysters sold live and unopened, all oysters will be pre counted by our laser counter into 4 dozen bags, order as many bags as you like. We do this for quick easy transactions saving your time and ours. Order as many bags as you’d like.

OYSTER CARE AND STORAGE:
Our wild caught rock oysters are best kept COOL between 15C and 21C away from direct sunlight and are perfectly fine to eat 10 days from harvest date.
DO NOT REFRIGERATE UNSHUCKED OYSTERS you will kill them 😢 store in a cool part of the house, garage concrete floor, laundry tiles etc.
on hot days an esky with a cold pack wrapped in a cloth or simply wrap oysters in a towel hose them down. If you notice one or 2 of your oysters have opened themselves early, this is normal, some are simply confused and have opened up waiting for the tide to come back in! which is why we do bakers dozen (13) to make up for any early openers 😊

Oysters were harvested this afternoon and are sold live/unshucked. We have handmade knives for sale and are happy to give you a demo on how to shuck.

Lots of fresh local produce on offer at the wauchope market, hope to see you there 🙂

Hey guys Port Oyster Company here, - CASH REWARD for information - long shot but we are looking info/leads on over $10’000 of damage caused on our oyster leases last night in limeburners creek.

Someone has smashed one of our pontoons in half driving in the dark or under the influence or both. This is a 4 knot / no wake zone and to smash through 5 heavy duty cross joints the boat was obviously speeding recklessly. We suspect the boat could be a v-hull around 5 metre mark. This is a pretty decent smash I would be suprised if no one was injured or their boat is not seriously damaged.

We put a lot of work into growing oysters and battle the elements every season to provide for our family’s, every year we have damaged leases from boaters who don’t know the rules, don’t know where they are going or simply just don’t care and we have to wear the cost of their reckless unsafe behaviour.
