I had a delicious breakfast this morning!

Recipe: Quinoa Salad with Lemon Dressing

Ingredients:

1 cup quinoa, rinsed
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled
Lemon Dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, salt, and pepper to taste
Instructions:

Cook the quinoa: Combine 1 cup rinsed quinoa with 2 cups water in a pot; bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to taste. Pour over the salad and toss to combine.

Let the salad sit for at least 15 minutes to allow flavors to meld.

Serve and enjoy!
