🐟 Tuna Steak Fillets

These are locally caught off the south coast off Ulladulla, New South Wales. It’s a cooking tuna (less suitable for sashimi)

These tuna fillets come in a pack of 2 x 250g, so a total of 500gms for $19.14.
Sear the outside and leave the inside rare to medium-rare. So simple and delicious. You can marinate with soy, ginger, and citrus or simply season with salt, pepper, and lemon for a burst of natural flavour.

🐟 Hoki Fillets

Delicate and sweet flavour. Pan fry with lemon, or these fillets work well in a casserole. These are thawed so use within 4-5 days (or re-freeze but it will lose some quality). Wild caught, not farmed, and packed in New Zealand (not China).

Roasted Beetroot and Carrot Salad

Ingredients:

For the Salad:

3 red beets, trimmed and peeled
3 golden beets, trimmed and peeled
6 carrots, halved lengthwise
Olive oil
Salt, to taste
Burrata cheese
For the Dressing:

3 tbsp olive oil
2 tbsp white wine vinegar
1 tbsp honey
1 garlic clove, minced
1 tsp fresh rosemary, finely chopped
Salt, to taste
Instructions:

Preheat Oven:
Preheat your oven to 400°F (200°C).

Prepare Vegetables:
Cut the beets into wedges and toss with olive oil and salt. Arrange the beets and carrots on a baking sheet in a single layer. Roast for 30 minutes, or until tender and caramelized.

Sauté Beet Greens:
While the vegetables are roasting, quickly sauté the beet greens in a pan with a little olive oil until wilted. Set aside.

Make the Dressing:
In a small bowl, whisk together olive oil, white wine vinegar, honey, minced garlic, rosemary, and a pinch of salt.

Assemble the Salad:
Once the vegetables are done roasting, let them cool slightly. Combine the roasted beets and carrots with the sautéed beet greens. Top with burrata cheese.

Dress and Serve:
Drizzle the dressing over the salad. Serve immediately and enjoy!

Baked Quinoa with Zucchini, Corn, and Tomatoes 🍅🥒🌽

This wholesome and colorful baked quinoa dish is loaded with summer vegetables like zucchini, corn, and tomatoes. It's perfect as a nutritious main course or a vibrant side dish!

Ingredients:
1 cup quinoa, rinsed 🍚
2 cups vegetable broth (or water) 🥣
1 zucchini, sliced into rounds 🥒
1 cup cherry tomatoes, halved 🍅
1 cup corn kernels (fresh or frozen) 🌽
2 cloves garlic, minced 🧄
2 tbsp olive oil 🫒
1 tsp dried oregano 🌿
Salt and pepper, to taste 🧂
Fresh basil leaves for garnish 🌱
Instructions:
1️⃣ Cook the quinoa: In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, reduce the heat, and simmer for about 15 minutes, until the quinoa is cooked and the liquid is absorbed. Fluff with a fork. 🍴

2️⃣ Preheat your oven to 375°F (190°C). 🔥

3️⃣ Sauté the vegetables: In a pan, heat 1 tablespoon of olive oil over medium heat. Add the zucchini and cook for 3-4 minutes on each side until lightly browned. Set aside. In the same pan, add another tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the corn and cherry tomatoes, cooking for another 3-4 minutes. 🍅🌽

4️⃣ Mix and season: In a large bowl, combine the cooked quinoa, sautéed vegetables, oregano, salt, and pepper. Mix well. 🥄

5️⃣ Assemble the dish: Transfer the quinoa mixture to a baking dish. Arrange the zucchini slices on top, and gently press them into the mixture. 🍲

6️⃣ Bake: Place the dish in the oven and bake for 15-20 minutes, until the top is golden and slightly crispy. ⏳

7️⃣ Serve: Remove from the oven, garnish with fresh basil leaves, and serve warm. Enjoy this healthy, veggie-packed delight! 🌿🍽️

🗽NEW: Plenty of Oils to choose from!

Speaking of ‘too much of a good thing’: whilst members and Hubster alike have taken to the new Mount Zero olive oil (not to mention the olives!), the 2L cask is a little big for all but the true aficionados. So for a smaller size, we’ve gone up north to in Queensland where produce a range of oils in 375ml bottles – from Macadamia to Peanut, and from Sunflower to Safflower.
The latter is a better alternative to Canola for (deep)frying as it has a higher smoke point. Besides, if you prefer to remain GMO-free, you may prefer 🌼Safflower Oil: in Australia, over 20% of the rapeseed grown to make Canola is genetically-modified (mainly to make it glyphosate-tolerant).

(Note: the Avocado Oil will be available late September)

Zucchini, bacon and cheese bread

Ingredients:

3 eggs
1 tablespoon sugar
½ cup (120 ml) oil
1 cup zucchini, washed and shredded (about half of a medium zucchini)
1 cup (200 g) cooked and drained chopped bacon (cooled)
1 cup (100 g) shredded Cheddar cheese
6 tablespoons milk
1 ½ cups (190 g) all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
Pinch of salt
1 teaspoon black pepper
Instructions:

1. Prepare the Ingredients:

Preheat your oven to 350°F (175°C).
Prepare a loaf pan by greasing and flouring it or lining it with parchment paper to ensure easy removal.
Cook the bacon until crispy, then drain on paper towels and let it cool.
Wash and shred the zucchini, and set it aside.
Make sure to squeeze out excess moisture if the zucchini is too wet.
2. Mix the Wet Ingredients:

In a spacious mixing bowl, whisk the eggs until they become slightly frothy.
Add the sugar and continue to beat until combined.
Gradually add the oil and milk, mixing until smooth.
Stir in the shredded zucchini, chopped bacon, and grated cheddar cheese until evenly distributed.
3. Combine the Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and black pepper.
4. Make the Batter:

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Bake the Bread:

Transfer the batter to the prepared loaf pan, leveling the surface with a spatula.
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the middle comes out clean.
If the top starts to brown too quickly, cover it loosely with aluminum foil to prevent over-browning.
6. Cool and Serve:

Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes.
Move the bread to a wire rack to cool thoroughly.

Hawaiian Carrot Pineapple Cake Recipe
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 cup vegetable oil
4 large eggs
2 cups grated carrots
1 cup crushed pineapple, drained
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
Cream cheese frosting
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Combine Wet and Dry Ingredients:
Add the vegetable oil and eggs to the dry ingredients. Mix until well combined.
Add Carrots and Pineapple:

Shepherd’s croissants: long demanded, but short lived.

😋🍍🍰 Refreshing No-Bake Pineapple Mousse Cheesecake

Ingredients:
2 cups crushed graham crackers
1/2 cup melted butter
1/4 cup granulated sugar
2 cups cream cheese, softened
1 cup powdered sugar
2 cups pineapple chunks,
1 cup heavy cream
1 tablespoon vanilla extract
1 packet gelatin
1/4 cup cold water
Pineapple slices for garnish
Directions:
In a bowl, combine crushed graham crackers, melted butter, and granulated sugar. Press the mixture into the bottom of a springform pan to form the crust. Chill in the refrigerator for 15 minutes.
In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy. Fold in the pineapple chunks.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
In a small saucepan, dissolve the gelatin in cold water over low heat. Allow to cool slightly before mixing it into the cream cheese mixture.
Pour the mixture over the prepared crust, smoothing the top with a spatula. Chill in the refrigerator for at least 4 hours, or until set.
Garnish with pineapple slices before serving.

NEW to Box Divvy

🌟🌟 Eastcoast Juices 🌟🌟

Eastcoast Juice is probably the second most requested product by members (after toilet paper), and after we read a taste test ranking 11 supermarket brands of orange juice, we know there was only one option (aside from squeezing orange juice yourself, which will always be the best option.

As it turns out, Eastcoast Beverages are local (Kulnura on the Central Coast, where some of our oranges (Tony Perrotina), lemons and honey (Snives Hives Orange Blossom) are produced.

It’s family-owned, 3rd generation farmers who grow much of their own fruit in Kulnura.

Eastcoast juice contains no preservatives (their website still shows 202, but a spokesperson confirmed that has now been removed). The juice must be chilled at all times, so it’s only available as part of our chilled service.

Make no mistake: juice – even freshly squeezed – will not deliver the same amount of nutrition as the whole fruit.
Along the way, it loses fibre, polyphenols and antioxidants. What’s more, it can contain high levels of (natural) sugar – around 5% - so don’t go overboard.

Still, it beats sugary drinks which typically contain 11% processed sugar. As with most things: drink juie in moderation…

The range includes OJ and Cloudy Apple Juice (both in 400ml and 2L bottles), as well as the Jive range of fruit smoothies.

Oh, and yes: we’re cheaper than the supermarkets…💲💲

Heaps Normal: this small independent brewer in Marrickville makes alcohol-free beer that tastes suspiciously like…beer. Honestly, we cannot tell the difference with regular beer (but we certainly can tell the difference after 3 or 4 cans, in a good way!)

They only started in 2020, and are now stocked in over 3000 venues across Australia – no mean feat. We spoke with Ben Holdstock, one of the 4 co-founders - responsible for the brewing process. “I spent quite a bit of the 2020 lockdown brewing beers in my kitchen using very crude equipment, but the beers turned out to be 1 per cent [alcohol] or a bit more”. He had to go back to square one to develop a new brewing process and recipe.

And the rest is history, as they say.
On the way, they raised $8.5m from a bunch of investors to set up their own brewery in Marrickville. Their biggest challenge is “Trying to keep up with growth and the way that changes your business.”

We’ll hear more from Ben in the coming months when he’ll come onto our new Un-supermarket Podcast with Jayne and Leigh.

What we like about Heaps Normal is not just their product, but also the way they tell their stories. They’re quirky and funny, and non-preachy – like Dennis and Dutch Courage.

Best of all, their beer only contains water, malt, hops and yeast. No preservatives. There are traces of alcohol, but no more than you’ll find in very ripe bananas (yes true!).

Carrot Cake Zucchini Muffins 🥕🧁

Ingredients:
For the muffins:

1 ½ cups all-purpose flour 🌾
1 tsp baking powder 🥄
1 tsp baking soda 🥄
1 tsp ground cinnamon 🌿
½ tsp ground nutmeg 🌰
½ tsp ground ginger 🌿
½ tsp salt 🧂
1 cup granulated sugar 🏺
½ cup vegetable oil 🛢️
2 large eggs 🥚
1 tsp vanilla extract 🌼
1 cup grated carrots 🥕
1 cup grated zucchini 🥒
½ cup chopped walnuts (optional) 🌰
½ cup raisins (optional) 🍇
For the glaze:

1 cup powdered sugar 🍚
2-3 tbsp milk 🥛
½ tsp vanilla extract 🌼
Instructions:
1️⃣ Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. 🔥

2️⃣ In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. 🌾🥄🌿

3️⃣ In another bowl, beat the sugar, vegetable oil, eggs, and vanilla extract until well combined. 🏺🛢️🥚🌼

4️⃣ Gradually add the dry ingredients to the wet ingredients, mixing until just combined. 🍰

5️⃣ Fold in the grated carrots and zucchini, and if using, the chopped walnuts and raisins. 🥕🥒🌰🍇

6️⃣ Divide the batter evenly among the muffin cups, filling each about ¾ full. 🧁

7️⃣ Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. ⏳

8️⃣ Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. 🌬️

9️⃣ For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. 🍚🥛🌼

🔟 Drizzle the glaze over the cooled muffins. 🍰

Directions:

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Mix in the sour cream, lemon juice, and lemon zest until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.
For the cream cheese frosting, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Mix in the vanilla extract and lemon juice.
Frost the cooled cupcakes with the cream cheese frosting and garnish with lemon zest.

Lolli’s Artisan Soup Mixes: a meal on its own

Produced by Colleen Walters on Queensland’s Sunshine Coast, these mixes will take your soup to a while new level. Or at least, they’ll save you time (and money) having to get each ingredient on its own. (Each variant has between 20 and 40 different ingredients – and all of them (except for maltodextrin) are whole foods and spices.

The packs look colourful – almost too good to open – but trust us: they’re worth it. Each one will deliver 10-12 serves (easily 2-2.5L) of thick and richly flavoured soup.
