Our new delicious Salamis. Both made in the french style by the great team of Kathy & James . One is our wonderful chestnut-fed pork plus pepperberry, aniseed myrtle and white wine. The other has macadamias, wattle seed and amontillado sherry. Unlike many salami that are fermented fast leaving a nasty sour taste, these show real skill allowing the sweet meat and other flavours to shine through. Only to be found this weekend and the following.

Some lovely Black/Swamp Wallabies at our farm, drove slowly so they slowly went onto the farm without injuring themselves. Always nice to see locals.. it was an echidna a few weeks back. Still gives@me a smile seeing the critters.

We now have Isterband (swedish smoked sausages)! This classic of pork, pepper, allspice and potato is often served with beetroot, potatoes with dill sauce and mustard. Of course we will see lots of people from Embassy of Sweden in Canberra on Sunday at the Southside Farmers Market to get some 😉
