When it comes to the Christmas season in French Canada, one dish that is always loved is Tourtière.
It is a delicious dish, and its history dates back to the earliest days of New France.
Let's learn more about the history of Tourtière :)

Tourtière is most often associated with réveillon, a late-night festive feast that is known for lots of food being served.
As part of that feast, which dates to the 1600s in New France, Tourtière was served. The meat used at the time was often rabbit, pheasant or moose.

Another origin comes sea pie, enjoyed among colonists in the 1700s.
This was a layered meat pie that often used fish as the filler. It was made by lining a saucepan with a thick layer of pastry and then filling it with alternating layers of meat.

There are some food historians that believe Tourtière dates to the Fifth Century CE where there was a pie called La Patina, served in a bronze pot with layers of pastry.
As for the name, there are several theories about where that comes from.

The name "tourte" comes from the name for a pigeon-like bird, once used as the meat in Tourtière as they were easy to catch.
Another origin to the name is that Tourtière refers to the pie pan in which the meat pie was cooked and baked traditionally in Quebec.

The earliest known written recipe of Tourtière dates to 1840 in the cookbook, La cuisinière canadienne. This is believed to be the earliest-known French-language cookbook ever published in Canada.
In the early recipes, lard was used due to the scarcity of butter.

Today, Tourtière is a very popular dish in French Canada and is available year round in grocery stores.
While it started in Quebec, it has spread throughout Canada and even reached into the United States where it is growing in popularity.
