After a large Christmas dinner, there's nothing better than a light, tart, lemon mousse topped with homemade lemon curd. I recently tried store-bought lemon curd and it was nothing like homemade. Lemon curd is also a great way to use up excess eggs; although my girls haven't been too generous lately π. Hope the family enjoys this as much as I do tomorrow! Best of all, it's make-ahead so everything's done except the whipped cream just before serving. π
