A couple of weeks ago we harvested our garlic scapes. The scape is the flower stock of the garlic plant. We pick it because it is delicious and is necessary to ensure large garlic bulbs.

It has the consistency of a green bean but tastes like garlic. By removing the scape the plant diverts it’s energy into making big roots rather than spending energy trying to make a flower and “seeds”.

We wait until the plant is about 60% yellow before we harvest. Usually the last week of July.
