A new study suggests that consuming up to three eggs per day can be beneficial for healthy adults by improving HDL (good cholesterol) function and promoting a less atherogenic LDL (bad cholesterol) profile. The study found that while one egg a day was sufficient to increase HDL function and large LDL particle concentration, consuming two to three eggs daily supported greater improvements in HDL function and increased plasma carotenoids.
