How short is the window to harvest microgreens? 🌱
Microgreens, as you know by now, it’s not a type of plant, it’s a stage of a plant’s life cycle. At that stage, cotyledons, which are usually two, heart-shaped, embryonic leaves, have fully developed, and the first true leaf might or might not (it depends on the varieties and growers decision), have emerged.
The harvest window is very short, so a proper and precise production schedule is crucial to avoid food/production waste 🌱

Took some time off to check out fun local places including a barn yard sale and 🌱 tasting at @ortalizafarms before heading to two of the hosts of today’s W.E. ❤️ LOCAL OPEN FARMS by Tourism Windsor Essex 🍇 we had a great time at Oxley Estate Winery where we went to a guided vineyard tour, did some colouring, and drank some kid-friendly wine 🍷😂👩🌾 then headed to The Farm House Market for snacks, more colouring, and ready-to-go dinner made by them 😋 such a lovely family and business!

Roasted Asparagus Salad with a lemon vinaigrette.
SAVE THIS RECIPE! You’ll definitely make this salad this summer. Perfect as well for a Mothers Day luncheon.
Ingredients I used:
* 1 bunch of asparagus, trimmed
* 2 tablespoons olive oil
* Salt and pepper
* 1 romaine heart greens
* 1 avocado, sliced
* 1/4 cup of chopped almonds
* 1/4 cup crumbled feta cheese
* mizuna microgreens @ortalizafarms
For the vinaigrette:
* 1/4 cup olive oil
* 2 tablespoons freshly squeezed lemon juice
* 1 tablespoon honey
* 1 teaspoon Dijon mustard
* Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Arrange the asparagus on a baking sheet, drizzle with olive oil and season with salt and pepper.
3. Roast the asparagus in the oven for 10-15 minutes, or until tender and lightly browned.
4. While the asparagus is roasting, prepare the vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
5. In a large bowl, toss together the mixed greens, avocado, sliced almonds, and feta cheese.
6. Once the asparagus is done, add it to the salad and drizzle with the lemon vinaigrette.
7. Serve immediately and enjoy!
