Had the pleasure of visiting The Allium Restaurant in Calgary for the first time last night. 🌱

This six course meal left us in complete awe over the unique flavour profiles and beautiful presentations. Was a one of a kind dining experience we won’t soon forget. 🌱

This cooperatively owned plant-based restaurant greatly exceeded our expectations from start to finish. Highly recommended to anyone looking to enjoy a creative food and libations experience in downtown Calgary. 🌱

We might be a little biased when we say this, however we loved how they used microgreens to garnish every single dish! 🌱

Bourbon & Butter’s chef’s feature appetizer, Yellowfin Tuna Tartare is nothing short of impressive! 😮

Happy Earth Day! 🌱

At Urban Micros we make everyday Earth Day. 🌱

We do this in two ways.

- First by only using 100 % plant based, fully compostable containers for our microgreens. Did you know that our containers can be fully composted in as little as 2 to 4 months in a commercial composting machine?? Wow! Try comparing that to 20 plus years for a typical plastic container.

- Second by using a grow media made from 100% industrial h**p fibres that are fully bio-degradable after use. Making these Terrafibre h**p fibre mats the most sustainable on the market.

Best part is, we have been doing this since Day 1. That’s two years of compostable, plant-based and sustainable business practices.

Looks Delicious!!! 🌱❤️

Our Sunday Breakfast/ Brunch wasn’t supposed to be like this. Today started at 7am getting ready for the Belgian Spa race with a supposed toasted bagel and sliced cheese BUT there are delays due to rain… still after 2 hours of waiting… we made Brunch… Eggs Umami with Mans Eggs, Montreal Style bagels from Waynes Bagel, hollandaise sauce (we cheated and used Cook With Knorr pack, Urban Micros micro-greens, fresh local carrots, green beans and Valbella Gourmet Foods Mennonite Sausage! Oh and our garden’s fresh chives… YUM Umami Shop Canada
Oh and at the moment of posting… the race has not yet started…. Drop us a 🤙🏼 if you are also a Formula One fan!

New Lion’s Mane Hydrosols!!!

Lion's mane mushrooms exhibit extraordinary skin benefits!!

To say that this Hydrosol is rare is an understatement. Have not been able to cite any other examples of this?

They are loaded with naturally occurring antioxidant and anti-inflammatory compounds. Lion's mane mushrooms may also calm skin problems, and has even been shown to accelerate wound healing.

Use to spray directly on the skin to help fight off free radicals, reduce inflammation, increase hydration, and even to assist with wound healing.

This was a recipe from that we were so excited to be a part of last year and we have been thinking about it lately!
IT 👏🏻IS 👏🏻SO 👏🏻GOOD👏🏻

The salted sugar rim was made with organic sugar mixed with

INGREDIENTS:
1 shot Raspberry Turmeric Elixir
1/2 shot their Turmeric Ginger Shrub
1 shot fresh cranberry juice
3/4 fill with Our Charcoal Water Kefir
Top with Ginger Ale
Squeeze of lime
(Adding a shot of rum is optional but fantastic!)

🤯 It tastes like a cola..but better because it’s full of healthy goodness! We are definitley going to be making these again soon!!

We absolutely love our new freeze dryer!!! 🥶 With so many items to freeze dry, this thing literally never stops running!! What items do we freeze dry you may ask? We freeze dry our various microgreens that we use in our popcorn seasonings and finishing salts, as well as for use in some exciting new products that we are launching here very very soon! 😉

As seen here, we also freeze dry fresh fruit to use in our lollipops! 🍭
We even freeze dry our gourmet and medicinal mushrooms! 🍄

As you can tell, we freeze dry a lot of items! When one batch is done, there another batch of items ready to be loaded into the machine! 😊

Freeze dried is definitely the way to go for us, and by far supersedes the old dehydration method!

New Reishi and Peppermint Hydrosols!!! Made with grown-in-house ingredients which are then hydro-distilled in small batches using our copper alembic still.

So, what exactly are Hydrosols, and what are they good for?

Hydrosols are the condensate water co-produced during the steam or hydro-distillation. These water-based products are made from the distillation of fresh flowers, leaves, fruits, and other plant materials. They’re a byproduct of the essential oil manufacturing process and share many of the same properties as essential oils.
The difference is that Hydrosols are mostly water. This means they’re much less concentrated than essential oils.

Essential oils and Hydrosols do have some similar properties, but Hydrosols have a much higher water content. Why is that important? This means they’re gentler than essential oils and can be applied directly to your skin without needing to dilute them with a carrier oil. They also have a softer, more subtle scent. Hydrosols are often used in skin care or aromatherapy products.

Although Hydrosols may sometimes be referred to as “floral water,” is not the most accurate description; as Hydrosols don’t just come from flowers, but but are also derived from bark, roots, branches, leaves, fruits, seeds, and even mushrooms can produce both essential oils and/or Hydrosols.

Usually the reason distillation is undertaken is to obtain the essential oils contained in the plant material, however distillation can be undertaken specifically to produce the plant water that results.

Hydrosols may also be used in products not intended for oral use. These include:
* skin and makeup products, like toners, creams, and other emollients
* topical creams for wounds, inflammation, or soothing the skin
* body products like deodorant or perfume
* aromatherapy products that can be diffused into the air
* alternative medicines

They can even be used to add flavour to drinks and other foods.

Featured Microgreen of the week - Broccoli. 🥦

Why Broccoli microgreens?

Besides the fact that they are delicious; Broccoli microgreens contain the highest amount of sulforaphane available compared to almost any other food available.
Sulforaphane is a sulphur compound found in cruciferous vegetables like broccoli, bok choy and cabbage.

Here are just a few of the benefits sulfurophane is known for:

* Fighting inflammation
* Cancer prevention
* Improved heart health
* Improved digestion

In addition to containing Sulforaphane, studies have shown that broccoli microgreens can have up to 40 times the amount of vitamins and minerals than their mature counterparts. 🌱

Broccoli microgreens have larger quantities of magnesium, manganese, copper, and zinc. These are very essential minerals that most people are deficient in.

Microgreens are amazing because they actually contain all of these essential and powerful nutrients just 10-14 days after germination. So this means it is basically a plant the size of a four leaf clover that has more nutrients, vitamins and minerals than a head of broccoli.🥦

Do you know what this means for a mom to picky kids? This means you can get more nutritional value with less volume by adding microgreens to your family's food. What seems easier to make your kids eat, or to hide in food for that matter? Broccoli florets or broccoli microgreens that are smaller than a four leaf clover? Think we all know the answer to that one! 😉

Definitely my kind of toast!!

Here we have Chestnut mushrooms, truffle and lemon oil, along with a chickpea and chevre spread on top of whole wheat, and finally garnished with fresh green onions, and Red Radish microgreens! Love those variegated purple and green leaves! 🌱
(can make it vegan with a cashew cheese spread instead)
