Homemade English Muffins

Ingredients:

4 cups all-purpose flour
1 packet (2 1/4 teaspoons) active dry yeast
1 1/2 cups warm milk (about 110ยฐF/43ยฐC)
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon baking soda
Cornmeal, for dusting
2 tablespoons melted butter (optional, for brushing)
Instructions:

In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine the flour, salt, and baking soda.
Add the yeast mixture to the dry ingredients and stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
Once risen, punch down the dough and roll it out to about 1/2 inch thickness. Use a round cutter to cut out muffins.
Sprinkle cornmeal on a baking sheet and place the cut muffins on top. Dust the tops with more cornmeal and cover them with a cloth. Let them rise for about 30-45 minutes.
Preheat a griddle or skillet over medium-low heat. Cook the muffins for about 5-7 minutes on each side, until golden brown and cooked through. You may need to cook them in batches.
If desired, brush the warm muffins with melted butter before serving.
Total Time: About 3 hours (including rising)
Servings: About 12 muffins

Cranberry Orange Holiday Jam

Ingredients:

3 cups fresh cranberries
1 1/2 cups sugar
Zest of 1 orange
Juice of 2 oranges
1/2 cup water
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Directions:

In a medium saucepan, combine the cranberries, sugar, orange zest, orange juice, and water.
Bring the mixture to a boil over medium heat, stirring occasionally.
Once the cranberries begin to pop, reduce the heat to low and simmer for about 15 minutes until the mixture thickens.
Stir in the cinnamon, nutmeg, and cloves, and continue to cook for another 5 minutes.
Remove from heat and let the jam cool slightly before transferring to sterilized jars. Seal and refrigerate. The jam will thicken further as it cools.

Ingredients:
- 1 ripe banana, mashed ๐ŸŒ
- 1 tablespoon honey ๐Ÿฏ
- 1 egg ๐Ÿฅš
- 1 cup whole wheat flour ๐ŸŒพ
- 1/4 cup rolled oats ๐ŸŒพ

Instructions:
1. Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
2. In a large bowl, combine the mashed banana and honey.
3. Add the egg and mix until well combined.
4. Gradually add the whole wheat flour and rolled oats, mixing until a dough forms.
5. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
6. Use a cookie cutter to cut out shapes from the dough and place them on the prepared baking sheet.
7. Bake in the preheated oven for 20-25 minutes, or until the biscuits are firm and lightly golden.
8. Allow the biscuits to cool completely before serving.
9. Store any leftovers in an airtight container.

I made egg rolls today. Not only that theyโ€™re delicious, it is easy and cheap. Hereโ€™s what youโ€™ll need to make 25 egg rolls: Cost about $10.00
1 lb of ground beef/pork/chicken/turkey
1 lb shredded carrots
1/2 of a small cabbage- shredded
1 - 12 oz pkg of bean sprouts
1/2 onion
2 tbspn of soy sauce
2 tbspn of cooking oil
Salt and pepper to taste
1 pkg of egg roll wrappers ( 25 sheets)
2 eggs - as a binding agent
Sautรฉ the onion until clear, add the meat; stir until done. Add the carrots, bean sprouts, cabbage and soy sauce and cover for a few minutes. Add the 2 eggs and stop the cooking process by turning the burner off. You donโ€™t want to overcook the veggies. Add salt and pepper to taste. Drain and allow to cool.
Put about 1 1/2 tablespoons of the mixture to each wrapper. Fry in high heat. Serve with sweet and sour sauce. Enjoy!! ๐Ÿ˜‹๐Ÿ˜‹

Big Boyโ€™s Fresh Strawberry Pie
Ingredients:
1 frozen pie crust
1 1/4 cup sugar
3 tbsp cornstarch
1 1/4 cups water
3 tbsp strawberry jelly
2 cups strawberries, sliced
How To Make Big Boyโ€™s Fresh Strawberry Pie:
Bake frozen pie crust according to the directions on the package. Remove from oven and allow to cool for 30 minutes.
Meanwhile, in a small saucepan over medium heat, whisk together sugar, cornstarch and water. Bring to a boil, then reduce heat and simmer for 5 or so minute, until thickened.
Whisk in strawberry jelly. Remove from heat and set aside to cool.
Add strawberries to the cooled pie crust, then pour over strawberry jelly mixture. Refrigerate for a few hours until set.

Garlic Parmesan Chicken Pasta Bake ๐Ÿ—๐Ÿง„๐Ÿง€

Ingredients:
1 pound rotini pasta, cooked and drained ๐Ÿ
2 cups cooked chicken, shredded or diced ๐Ÿ—
4 tablespoons unsalted butter ๐Ÿงˆ
4 cloves garlic, minced ๐Ÿง„
1/4 cup all-purpose flour ๐ŸŒพ
2 cups whole milk ๐Ÿฅ›
1 cup chicken broth ๐Ÿฅฃ
1 cup grated Parmesan cheese ๐Ÿง€
1 teaspoon dried basil ๐ŸŒฟ
1 teaspoon dried oregano ๐ŸŒฟ
Salt and pepper to taste ๐Ÿง‚๐ŸŒถ๏ธ
1 cup shredded mozzarella cheese ๐Ÿง€
1/2 cup bread crumbs ๐Ÿž
2 tablespoons fresh parsley, chopped (for garnish) ๐ŸŒฟ
Instructions:
Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC). ๐Ÿ”ฅ

Make the Sauce: In a large saucepan, melt the butter over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute. ๐Ÿง„๐Ÿงˆ

Create the Roux: Stir in the flour and cook for 1-2 minutes, until lightly golden. Gradually whisk in the milk and chicken broth until smooth. ๐ŸŒพ๐Ÿฅ›๐Ÿฅฃ

Pineapple Chicken and Rice ๐Ÿ๐Ÿš

Ingredients:

1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon ginger, grated
Salt and pepper to taste
1/4 cup green onions, sliced
1 tablespoon sesame seeds

Directions:

In a large skillet, heat the olive oil over medium heat. Add the chicken cubes and cook until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
Add the pineapple and cook for an additional 2 minutes.
Stir in the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked through.
Return the chicken to the skillet, mix well, and heat through.
Serve garnished with green onions and sesame seeds.

Why buy store-bought when you can make your own Delicious Homemade Tortillas at home? Soft, warm, and perfect for wrapping your favorite fillings! ๐ŸŒฎโœจ

Ingredients:

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup warm water
- 3 tablespoons vegetable oil

Directions:

1. In a large mixing bowl, combine the all-purpose flour and salt.
2. Gradually add the warm water to the flour mixture, stirring with a wooden spoon until a dough forms.
3. Knead the dough on a lightly floured surface for about 3-5 minutes, or until smooth and elastic.
4. Divide the dough into 8 equal portions and roll each portion into a ball.
5. Heat a skillet or griddle over medium-high heat and lightly grease with vegetable oil.
6. On a floured surface, roll out each dough ball into a thin circle, about 6-8 inches in diameter.
7. Carefully transfer the rolled-out dough to the hot skillet and cook for 1-2 minutes on each side, or until lightly golden and bubbles start to form.
8. Remove the cooked tortilla from the skillet and keep warm in a clean kitchen towel while cooking the remaining tortillas.
9. Serve the homemade tortillas warm with your favorite fillings or dishes.
