The days are getting cooler and the nights cooler still. We all know what that means ... Our Favorite Time of the year is upon us. Our 150+ Vendors have been preparing all year to bring you the Best they have from their warm woollies, to sparkling jewels, the smells of warm comfort, to the perfect gifts for you to give. Stop and rest, have lunch or a snack in our Food Court and be sure to take a few treats home for later. Be sure to “Like” our page so you don’t miss a day of “The Parade Of Vendors” where we will showcase all the wondrous things you will find at the show. Homemade English Muffins

Ingredients:

4 cups all-purpose flour
1 packet (2 1/4 teaspoons) active dry yeast
1 1/2 cups warm milk (about 110°F/43°C)
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon baking soda
Cornmeal, for dusting
2 tablespoons melted butter (optional, for brushing)
Instructions:

In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine the flour, salt, and baking soda.
Add the yeast mixture to the dry ingredients and stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
Once risen, punch down the dough and roll it out to about 1/2 inch thickness. Use a round cutter to cut out muffins.
Sprinkle cornmeal on a baking sheet and place the cut muffins on top. Dust the tops with more cornmeal and cover them with a cloth. Let them rise for about 30-45 minutes.
Preheat a griddle or skillet over medium-low heat. Cook the muffins for about 5-7 minutes on each side, until golden brown and cooked through. You may need to cook them in batches.
If desired, brush the warm muffins with melted butter before serving.
Total Time: About 3 hours (including rising)
Servings: About 12 muffins
