Try this for a delicious lunch!!

Gourmet Grilled Cheese with Tomatoes and Microgreens

4 slices multigrain rye bread
2 tablespoons butter
1 tablespoon Dijon mustard
6 slices of old cheddar cheese
1 package Ombra™ brown tomatoes
1 package LivingCube™ Basil microgreens
Salt and pepper, to taste
Instructions

Butter the bread on one side. Place the two slices butter side down in a frying pan. Evenly spread the Dijon mustard.
Add the cheese, tomatoes and microgreens to each piece of bread. Top with the other buttered slices (butter side out) and cook over medium heat.
Watch and flip once. When your bread is lightly browned, season with salt and pepper to taste and enjoy with a smile!

Look at this amazing way to use your delicious Micro Green Sweet peas!
Pea Greens Mango Rainbow Salad
Prep Time 8 mins.

Making this pea greens mango rainbow salad requires no cooking skill. It’s elegant and perfectly simple!
Course: Salad
Cuisine: American

Servings: 4

Ingredients
2 medium size radishes
6 oz leafy greens chopped (I used green romaine lettuce in this recipe)
2 oz red cabbage shredded
1 oz pea greens
1 yellow mango
2 inch section English cucumber sliced
3 tablespoons roasted peanuts or other nuts
Instructions
Gently toss all ingredients together before serving. Serve with balsamic vinaigrette.
