Try this for a delicious lunch!!

Gourmet Grilled Cheese with Tomatoes and Microgreens

4 slices multigrain rye bread
2 tablespoons butter
1 tablespoon Dijon mustard
6 slices of old cheddar cheese
1 package Ombra™ brown tomatoes
1 package LivingCube™ Basil microgreens
Salt and pepper, to taste
Instructions

Butter the bread on one side. Place the two slices butter side down in a frying pan. Evenly spread the Dijon mustard.
Add the cheese, tomatoes and microgreens to each piece of bread. Top with the other buttered slices (butter side out) and cook over medium heat.
Watch and flip once. When your bread is lightly browned, season with salt and pepper to taste and enjoy with a smile!

Pea Greens Mango Rainbow Salad
Prep Time 8 mins.

Making this pea greens mango rainbow salad requires no cooking skill. It’s elegant and perfectly simple!

Servings: 4

Ingredients
2 medium size radishes
6 oz leafy greens chopped (I used green romaine lettuce in this recipe)
2 oz red cabbage shredded
1 oz pea greens
1 yellow mango
2 inch section English cucumber sliced
3 tablespoons roasted peanuts or other nuts
Instructions
Gently toss all ingredients together before serving. Serve with balsamic vinaigrette.

Ingredients
Salad

10 ounces asparagus, rinsed and trimmed
1 teaspoon olive oil
4 cups fresh assorted mixed microgreens, rinsed and drained
2 cups fresh blackberries
¼ cup slivered almonds or pine nuts
½ cup pomegranate arils
salt and pepper to taste
Dressing

½ cup pomegranate juice
¼ cup red wine vinegar
2 tablespoons honey
½ cup canola oil
1 fresh lime, juiced (about 2 tablespoons)
Instructions
Heat oven to 400 degrees.
Place asparagus on a baking sheet and drizzle with olive oil. Roast for about 8 minutes until crisp. Remove from the oven and set aside. When cool, cut asparagus into 1-inch pieces (this can be done earlier in the day).
Assemble the salad in a large, decorative bowl by tossing together the microgreens, asparagus, blackberries, nuts, pomegranate arlis and salt and pepper, if using.
To make dressing, in a small bowl, mix together pomegranate juice, vinegar and honey. Let it sit for 10 minutes at room temperature.
Whisk in olive oil and lime juice. Store leftover dressing in the refrigerator. Stir thoroughly before serving.

If you have ever had fresh garden vegetables then tried some from the store, you can understand why kids make such a fuss about eating there greens! Those are some sad vegetables :( You almost can't compare the taste of the two... That's why we grow our microgreens year round freshly hand harvested every couple of weeks so your meals don't have to lack in flavour!

We would even go as far to say they pack a bigger punch than there fully grown mature counter parts!!! Hello veggie lovers, gardeners, and green freaks! Fall has come and gone and winter is now among us!
