Good Morning! This is one of our favourite ways to eat Microgreens. Note: Vitamin C makes protein more accessible. Microgreens can round out nutritional deficits as they are packed with a variety of minerals and vitamins. For great kimchi you’re going to want to check out the Halifax Brewery Market. (Daikon kimchi is pictured.) We have attended all Saturday markets held at the Brewery Market in 2024. We harvest and sell on the same day. Fresh is best!

The sunflower shoots and radish microgreens add extra delight to this salad! The nutritional profile of sunflowers is amazing.
Nutrients: Vitamins A, B complex, D, and E, calcium, iron, magnesium, potassium, and phosphorus. 20% protein. (Idaho State University research) No wonder we feel energized!🌱💪

Good Morning! Microgreens make it easy to elevate this breakfast. 😊🌱👍 Pictured: 1. Simple quiches 2. Pea shoot pesto 3. Delightful quiche topped with pea shoot pesto and Microgreens !
Note: The beauty of a home-made pesto is that nutritional value is not lost through the cooking process as the fresh pesto can be mixed and slightly warmed after the pasta is strained. Fresh is best!

Did you know pea shoots are loaded with vitamin C? Although it may be difficult to eat 100g a day of pea shoots, using them as a salad base or as a base in a pesto can help us reach our recommended daily intake. Tonight we used pea shoots in a pesto. Yum!

May Help Prevent or Reduce Cancer Activity

"Microgreens made from cruciferous vegetables like broccoli are an excellent source of glucosinolates, naturally occurring plant chemicals that contain sulfur.

Research suggests that glucosinolate-rich foods have powerful anticancer activity. In humans, a higher consumption of cruciferous vegetables has been associated with a lower risk of breast cancer. And studies in animals have found that the glucosinolates present in leafy greens can limit cancer cell growth and proliferation.

Glucosinolates like sulforaphane in micro broccoli also support detoxification processes in the body. In particular, sulforaphane promotes the production of key molecules involved in detox pathways in the liver.

The cancer-protective compounds found in sprouts and microgreens are most effective when consumed raw. That’s one reason why microgreens, which are typically consumed uncooked, are so nourishing. Added bonus: Eating micro broccoli can be easier on the digestive system than eating raw (mature) broccoli."
