Do you know there are different varieties of garlic? Just like apples, each variety has its own unique attributes. The Porcelain varieties I grew (Great Northern and Fish Lake) were purchased from my friends Shirlene and partner Mike at Earth Apple Farm/New Mountain Garlic. https://earthapplefarm.com/newmountaingarlic/

They tout Porcelain types as having larger cloves (less peeling) and a strong spicy flavour/heat profile. A little goes a long way! It also has one of the best storage capabilities, ranging from 6-8 months.
