This weekend's line up includes Wild BC morels, fresh locally grown shiitake, oyster mushrooms and lions' mane. We also have ready to eat mushroom chips, mushroom crackers (new!) and mushroom jerky. Ask about our mushroom seasonings - great on salads, soups and popcorn!

Lion's mane mushrooms are a delicious and unique variety of mushrooms known for their meaty texture and slightly sweet, seafood-like flavor. Here’s a simple and tasty recipe for sautéed lion's mane mushrooms.

Ingredients:

1/2 pound lion's mane mushrooms
2 tablespoons olive oil or butter
2 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
Salt and pepper to taste
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Mushrooms:

Tear the mushrooms into bite-sized pieces or slice them.

Sauté the Mushrooms:

Heat the olive oil or butter in a large skillet over medium-high heat.
Add the mushrooms to the skillet in a single layer. If necessary, cook them in batches to avoid overcrowding the pan, which can cause the mushrooms to steam rather than sauté.
Cook the mushrooms without stirring for about 3-4 minutes, allowing them to brown on one side. Then, stir and cook for another 3-4 minutes until they are golden brown and crispy on the edges.

Add Garlic and Thyme:

Reduce the heat to medium. Add the minced garlic and thyme to the skillet.
Sauté for an additional 1-2 minutes until the garlic is fragrant and slightly golden.

Season and Finish:

Season the mushrooms with salt and pepper to taste.
Drizzle with lemon juice and toss to coat.

Garnish and Serve:

Remove the skillet from the heat.
Garnish the sautéed mushrooms with fresh parsley.

Serving Suggestions:

Serve the sautéed lion's mane mushrooms as a side dish with grilled meats or fish.
Add them to pasta dishes, risottos, or grain bowls.
Use them as a topping for toast or bruschetta.

Sauteed morels are so delicious! They are perfect eaten just as is, or added to toasted french bread with a bit of goat cheese.

Ingredients
Morel Mushrooms
Butter
White Wine
fresh thyme

Directions
Heat a saute pan over medium high heat
Add add mushrooms
Cook mushrooms (dry fry) without disturbing for 2-3 minutes then add butter and wine
Remove from heat, garnish with fresh thyme and serve hot

BBQ mushrooms taste so good because they absorb and enhance the rich, smoky flavors from the grill, creating a delicious umami-packed experience. Their natural earthiness is complemented by the caramelization that occurs during grilling, bringing out a subtle sweetness.

We went into a Whistler forest to see if we could find any mushrooms, and stumbled into a large patch of Devil's Club. Nasty stuff if you touch it, but in the spring you can harvest the buds. We boiled them for a couple of minutes, chilled them and added a splash of lemon juice and salt. Kinda tasted like green beans with a hint of pine. Delicious. Sautéed Lion's Mane Mushrooms - Lion's Mane mushrooms have a unique texture and a seafood-like flavor that make them a versatile ingredient in various recipes. Here’s a simple and delicious recipe for sautéed Lion's Mane mushrooms that can be used as a side dish, or added to pasta, salads, or sandwiches.

Ingredients:
Lion's Mane mushrooms 200g
1 tablespoon olive oil (or butter)
1 clove garlic, minced

1 teaspoon soy sauce (optional for a bit of umami flavor)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Prepare the Mushrooms: Tear or cut the mushrooms into bite-sized pieces.

Heat the Pan: In a large skillet, heat the olive oil (or butter) over medium heat until hot but not smoking.

Cook the Mushrooms: Add the Lion's Mane mushrooms to the skillet. Spread them out in an even layer to ensure they cook evenly. Let them cook undisturbed for about 3-4 minutes until they start to brown on one side. Flip the mushrooms and cook for another 3-4 minutes.

Add Garlic and Seasoning: Add the minced garlic to the pan and stir to combine. Cook for another 1-2 minutes until the garlic is fragrant. If using, add the soy sauce and stir well to coat the mushrooms. Season with salt and pepper to taste.

Finish and Serve: Once the mushrooms are nicely browned and tender, remove the skillet from the heat. Garnish with fresh chopped parsley. Serve immediately as a side dish or add to your favorite main dishes.

Other Variations:
Creamy Lion’s Mane Mushrooms: After sautéing, add a splash of heavy cream and simmer for a few minutes until the sauce thickens.

Lion’s Mane Mushroom Pasta: Toss the sautéed mushrooms with cooked pasta, a drizzle of olive oil, grated Parmesan cheese, and a handful of arugula or spinach.

Lion’s Mane Mushroom Sandwich: Layer the sautéed mushrooms with fresh greens, avocado, and a spread of your choice (like hummus or aioli) between slices of toasted bread.

Largest Living Organism - - The largest living organism on Earth is a honey fungus (Armillaria ostoyae) located in Oregon, USA. Covering approximately 2,385 acres (965 hectares), this massive underground network of fungal threads, called mycelium, is estimated to be around 2,400 years old.
