🍕 🌱Pizza is one of my families go to foods! So delicious and adding microgreens makes it more nutritious! 🌱🍕

🍕CHICKEN & RICOTTA PIZZA WITH MICROGREENS🍕

💥INGREDIENTS:💥

•1 recipe Food Processor Pizza Dough for Two
•½ recipe No-Cook Pizza Sauce, see box to left
•1 cup shredded cooked chicken
•½ cup sliced red onion
•½ cup ricotta cheese
•⅔ cup microgreens

Olive oil, salt, and black pepper

💥INSTRUCTIONS:💥

Preheat oven to 450° with pizza stone on bottom rack.

To build pizzas, transfer dough rounds to a pizza peel dusted with cornmeal. Divide sauce, chicken, onion, and dollops of ricotta between dough rounds.

Bake pizzas until crusts are nicely browned, about ⏰ 10 minutes. Top pizzas with microgreens, drizzle with oil, and season with salt and pepper.

🍕Pizza with Pesto, Mozzarella, and Microgreens🍕

💥INGREDIENTS:💥

•3 cups All-purpose flour
•½ tsp Active dry yeast
•Sea salt
•1¼ cup Water

💥TOPPINGS:💥

•6 tbsp Micro-arugula & lemon pesto
•1 cup Mozzarella
•1 cup Cherry tomatoes
•4 oz Prosciutto
•1 cup Microgreens
•Black pepper

💥INSTRUCTIONS:💥

1. COMBINE DOUGH INGREDIENTS
In a large bowl, using a wooden spoon, combine 3 cups of all-purpose flour, ½ teaspoon of active dry yeast, 1½ teaspoons of sea salt and 1¼ cups of water until a rough dough forms. If too rough, add another spoon of water.

2. RISE DOUGH
Cover the bowl with plastic wrap and set aside, at room temperature, for about 12-24 hours to rise or until more than doubled in volume.

3. WORK DOUGH
Turn the risen dough out onto a well-floured surface. The dough should be loose and stretchy, soft yet a little bit sticky. Sprinkle some flour over and divide into 2 pieces. Roll into 2 balls and then, working one-by-one, stretch the dough away and together from your hands, a few times, working the dough. Place on a baking sheet. Repeat with the second ball. Flour your fingers, and then shape the dough into roughly round pizzas.

4. PREPARE PIZZA

Add micro-arugula & lemon pesto, or any other fresh pesto, some fresh mozzarella, a few slices of fresh cherry tomatoes, prosciutto, and fresh pepper, if you wish.

5. BAKE
Bake the pizza in a preheated oven on the highest temperature, about 500 °F for 10-15 minutes until the toppings look roasted cooked and the crust is golden.

6. SERVE
Top with arugula microgreens, serve hot and enjoy.

🍳🥚AVOCADO, BACON AND GOAT CHEESE OMELETS🍳🥚

A simple, modern omelet recipe with creamy avocado and herbed goat cheese, crumbled bacon and micro greens!

💥INGREDIENTS:💥

• PAM® Olive Oil Cooking Spray Pump

• 4 eggs

• 2 tablespoons grated Parmesan cheese

• 2 tablespoons soft herbed goat cheese

• 2 slices cooked bacon, finely chopped

• 1 medium avocado, pitted, peeled, sliced

• micro greens such as pea shoots, Sunflower Shoots, radish, broccoli or Arugula

• STEP ONE

Spray 8-inch nonstick skillet with cooking spray; heat over medium heat. Pour in 1/2 cup Egg Beaters. Sprinkle with 1 tablespoon Parmesan cheese. Gently push cooked portions from the edges to the center with a spatula, so uncooked eggs can reach the hot pan surface. Continue cooking, tilting pan and gently moving cooked portions as needed.

• STEP TWO

When top surface of egg is cooked, top with 1 tablespoon goat cheese, half of the bacon and half of the avocado. Fold egg over on serving plate. Garnish with microgreens. Repeat with remaining ingredients.

🌱🍔Who doesn't love a delicious juicy burger? Even a Chicken Burger! Try this delicious meal next time you make a burger 🍔 😋

💥🌱EASY GRILLED CHICKEN BURGER🌱💥

💚💥INGREDIENTS

• 2 burger buns

• 2 small chicken breasts

• 1 small red onion

• 1 large tomato

• 1 hand full microgreens - (I used radish and broccoli)

• 1 egg

• 1 Tbsp dijon mustard

• 1 Tbsp lemon or lime juice

• abundant flavorless vegetable oil - (I used avocado oil my favorite)

• Salt

• Pepper

• balsamic vinegar - (optional)

💚💥INSTRUCTIONS:

• Preheat cast iron pan or heavy bottomed stainless steel pan (which has a tight-sitting lid) over medium heat until smoking hot.

• Generously salt and pepper chicken breasts.

• Add a few drops of oil or butter or ghee into pan, swirl around and add chicken breasts. Sear for 1-2 minutes per side.

• Put on lid, reduce heat to low and set alarm for 10 minutes.

• In the meantime prepare: mayonnaise: add eggs, mustard, lemon juice, salt (about 1/2 tsp) and pepper to blender and then use the lid without the middle part to cover. Start the blender on low so the ingredients don't spray out. Blend the ingredients together for about 10 seconds, then slowly pour in oil. It is important to ALWAYS do this slowly, from start to finish, never more than a spaghetti-thick string of oil AND, it has to be constant: don't stop pouring until the mayonnaise is ready. If you pour in more than a thin string you risk the mayonnaise to curdle. If this happens you will have to start all over, so be patient and maintain a steady hand. Once the blender can't continue blending because the mayonnaise has become too thick, stop the oil pouring, your mayonnaise is ready. (

🌱💥LEMON & GARLIC BUTTER PASTA WITH BROCCOLI MICROGREENS💥🌱

💚INGREDIENTS:

• Pasta

• Juice of one lemon

• Zest of one lemon

• 1 tablespoon of garlic

• 2 tablespoons of butter

• 2-3 handfuls of Broccoli microgreens

• Salt, pepper & olive oil

• Parmeson

💚INSTRUCTIONS:

• Cook spaghetti or prepare zucchini noodles.

• Sauté on a low heat the butter, garlic, lemon zest.

• Drain pasta, return it to its cooking pot and immediately pour the heated sauce over it, along with the lemon juice and microgreens, drizzle olive oil if needed and add salt and pepper to taste.

• Use tongs to gently toss the pasta, sauce and microgreens together.

• Top with grated Parmesan and serve.

•Enjoy! 💚

💥🌱SIMPLE LEMON PASTA WITH PARMESAN AND PEA SHOOTS🌱💥

💚INGREDIENTS:

• 2 heaping cups fresh Pea Shoots

• Zest of one large lemon

• ¼ cup lemon juice

• ⅓ cup good-quality extra virgin olive oil
• 1 cup grated parmesan cheese, plus extra for garnish (see recipe notes)

• Fresh ground black pepper, to taste

• ½ lb. spaghetti

• ½ cup pasta water (reserved from when you cook the spaghetti)

• Kosher salt, to taste

💚INSTRUCTIONS:

• If your pea shoots are particularly long, chop them into halves or thirds so they’re a bit easier to manage. Set aside.

• In a large bowl, whisk together lemon zest, lemon juice, olive oil, grated parmesan cheese, and a generous amount of fresh ground pepper. (I like to do this while I’m waiting for the pasta water to boil!)

• Cook spaghetti in very salty water until al dente.

• Reserve ½ cup of the pasta water (I just ladle some of the hot water out of the pot and into a measuring cup).

• Drain spaghetti and immediately add it to the mixing bowl with the lemon-olive oil mixture. Add reserved pasta water and toss to combine. The heat from the pasta will warm the sauce and melt the parmesan cheese.

• Add pea shoots to pasta and toss until parmesan has melted into a smooth sauce and pea shoots have softened slightly.

• Taste pasta and add a pinch of kosher salt to taste.

• Top pasta with additional parmesan cheese for garnish and serve immediately.

💥No matter what flavor you’re looking for, there is a microgreen that you can add to a recipe to achieve it!💥

🥪🌯Some delicious Sandwhich/Wrap recipes to try:

🥪Leftover Roast Chicken Sandwich with Microgreens and Mushrooms:

💥Ingredients

• Sourdough French Bread Loaf

• Leftover Roast Chicken

• 1 Tablespoon Butter

• 4 Button Mushroom Sliced

• 3 Whole Cloves of Garlic Peeled

• Salt and Pepper to Taste

• 1/2 Teaspoon Herbs de Provence

• Microgreen of your choice (Arugula, Radish, Sunflower, Broccoli, Pea Shoots)

• Honey Mustard Salad Dressing

• Slice of Cheddar Cheese

💥Toast the Bread:

• Preheat the oven to 350 degrees F.

• Cut your Sourdough French Bread Loaf into quarters. Take one quarter, and slice it into two.

• Top one side of the bread with your leftover roast chicken pieces.

• Toast the bread and chicken in the oven or toaster oven for 5 minutes. (The time will vary, depending on how crispy you want the bread. Check the oven frequently to ensure that your bread doesn’t get over toasted or burnt.)

💥Sautee the Mushrooms and Garlic:

• Meanwhile, in a small skillet on medium heat, melt the butter. Add the whole garlic and sliced mushrooms. Stir and add the seasonings. Add salt and black pepper, to taste. Add the herbs de provence (or Italian seasoning).

• Sautee the mushrooms and garlic until all the butter has been absorbed. The mushrooms should be nice and slightly brown at the edges.

💥Assemble the Sandwich:

• Take the bread and chicken out of the oven. Add the slice of cheddar cheese on top of the chicken.

• Add the sauteed mushrooms and garlic on top of the cheese.

• Finish with a handful of microgreens (or your favorite sprouts.)

• Pour the honey mustard salad dressing on top. Alternately, if you want to be more polite, you can use a knife and slather it on the other piece of bread.

• Enjoy!

• Sauce of your choice: (Ranch/ French onion spread any kind of spread or dressing of choice)

• Turkey or Ham slices

• Red bell peper (thinly sliced)

💚One of my favourite ways to use these microgreens, to get mine and my children's vitamins in, is to make smoothies.💚

🍓🍌My Children's favourite Banana Strawberry Smoothie Recipe:

• 1 cup frozen strawberries

• 1 frozen banana

• 1 cup liquid--any kind of milk, or water. Strawberry flavored fizzy water is great!

• If you don't use pre-frozen fruit, just add one cup of ice

• 1/2 cup of broccoli or Sunflower Shoots or both

• 1 Tbs. honey or agave, or other sweetener, if desired.

🍌🍓One of My Favourite Strawberry Banana Smoothie Bowl Recipes:

• 1 banana, frozen

• 1½ cups frozen strawberries

• ½ cup Silk Unsweetened Coconut Milk or milk of choice

• 1/2 cup of broccoli or Sunflower Shoots or both

For the toppings:

• Fresh strawberries, sliced

• Fresh bananas, sliced

• Oatmeal, (optional for a crunchy texture)
