Simply put, green beef tripe is the untreated content of a cow's stomach lining. 🐄 Unlike the white tripe you find in a supermarket, which have been bleached and therefore devoid of most nutritional value, green tripe is highly nutritious, containing essential fatty acids, digestive enzymes and protein. While green tripe may sometimes be tinted slightly green due to grass eaten by the host animal, it's predominantly brown and called "green" only because it is untouched, unbleached, and untreated.
