My philosophy in life when making changes is Crawl, Walk, Run.
Start slow, build a few good habits, then add to those habits.
I have used the process many times in my life and it works.
Here is a process I suggest to create Plant Based centered life.
Crawl: Do this for 30 days at least
a) Decide its important.
b) Understand a bit what its about.
c) Make sure every meal includes easy to make vegetarian dishes
d) Reduce prepared meats (hot dogs, other things heavy in nitrates)
Walk: Do this for 30 days at least
a) Reduce store bought meats from your diet, only eat something you prepare
b) Start introducing complex recipes (beans & rice & spices)
c) When going out to eat - start asking for the meatless variety
d) Add homemade popcorn, nuts and dried veggies as your snack foods
Run: Keep doing this
a) Drop more meat dishes from your diet
b) Start thinking about if you want eggs, fish, and cheese in your life
c) Add even more complex foods to your diet
d) Keep changing your diet
