Why can meat be frozen and then thawed, but something can't be uncooked?
Always wondered about that.

Speaking of cooking, its also a science experiment. Food changes flavor, texture, and even taste.
Shelf life is a whole other set of experiments, adding less than 1/10 of percent of something will extend the shelf life. Adding something else keeps the product consistency.

All these things are products and opportunities.

Very excited.
We have just started an AI Drone project with some students with Arcadia university.

The Drone will photograph out plants and connect it with growing data.

We will use the process to monitor the plant growth. Initial functionality will be to identify problems.
The next phase will be to connect with sensor data and customer quality data and then improve yields, taste, and other measures.

It will be a bit shocking.
It travels a long way.
On average takes 3 days to get to you.

And this is bad for you for few reasons.
1) Taste is lost in the transportation.
2) Nutrition is lost in the transportation.
3) It increases the cost of the food.
4) It increases the amount of carbon in the atmosphere.

Here is an article discussing rhe Aerofarms S**C with a link to a review of the AppHarvest **C.

Essentially he says they went public with a massive valuation based on potential future revenues and they do not have a serious plan to make the kinds of revenues they expect.

He articulates that they talk about how big the market is and they are hoping to get a small peice of it. A weak approach that no serious investor takes serious.
A company needs a plan and must be able to identify the number and amount of the market they can achieve. The TAM (Total Addressable Market) is useful as a predictor of potential competition, how many easy/hard it will be to find customers, and is growth at all possible. The TAM for cola drinks is huge, but since Coke and Pepsi dominate it, entering the market is tough.

He spends no time discussing the merits of the Aerofarms technology.
As bearish as he is on the company, an analysis of the tech would make it worse.

In the AppHarvest article he highlights that AppHarvest is relying on the Mastronnardi contract. He recognizes that AppHarvest is a Greenhouse operation (Indoor Growing) and not a Vertical Farming technology play.

Are vegetables that are grown in an indoor environment natural?
Many are initially thrown off on the concept of growing their vegetables in this perceived "unnatural environment."
However, this is not the case. All plants and vegetables grown in indoor farming technologies are produced in a completely natural process.
The indoor environment is set to maximize the efficiency of what is being grown.

Let's consider the pea plant.
Pea plants need the energy from the kight of the sun and damp soil conditions.
But, pea plants are susceptible to frost, and growth is affected by seasonal change..

So how are pea plants grown in indoor farming?
The internal conditions are set to adhere to the pea plants' optimal growing conditions.
An indoor farm that grows pea plants will increase light exposure and provide the wet, damp soil.

Most importantly, vegetables grown in indoor farming will not be affected by the seasons or weather conditions like frost.
Overall, indoor farming allows to optimize efficiency and reduce waste.
The end product is a delicious and healthy vegetable grown in a completely natural setting.

Systemic Bias, Photography and Shirley?
What is Zale going off on now?

I learned something new today, Shirley cards. These were cards produced by Kodak for the purpose of quality control of the chemicals in photography. Shirley cards were photographs of a white women with brunette hair. The technician would adjust the system to match the Shirley card.

Sounds good, right?
What does that have to do with systemic bias or racism? It's all technical crap.

The problem is, the matching doesn't show black and brown skin tones correctly. Dark skin tones don't show up the way they are in reality. By having a white women created a bias for film that showed white folks better than folks of color.
I am not saying or implying that Kodak was racist, in fact, once they were explained the problem they introduced films that solved the problem. (see the article)

But, the story is a great demonstration of how bias can be introduced without intention.
This is just one example of what is called "systemic racism". It's not that people are intentionally racist, it's that the system becomes racist (or at least bias) against people of color.

The problem in photography occurred at the beginning of the industry because the people developing the preparation technology didn't think about Black folks. Probably, because there were no Black folks working there. (that is probably a whole other story)

This is why progressive organizations work hard at having teams with people from a range of communities. These types of teams provide prospective that gets lost when everyone in the room looks the same.
