King of Pearl Oyster Mushroom
This variety of oyster has been a treat to get to know and grow. Similar to our Grey Dove variety but with the ability to grow absolutely enormous ruffly caps and hearty meaty stems which are amazing as a vegan scallop or for any stewing or soup/sauce making applications.
Also, true to their name the pearly luminosity of this variety has to be seen in person to be truly appreciated. Another gorgeous and delicious fungi we’re grateful to be able share with you all ✨

Bear’s Head (hericium americanum) is an incredibly versatile super food (it’s an amazing brain-food) and cooks up like a dream, easily mimicking crab, fish or even steak 🤤 Grab some before it’s gone!

The one and only, Bear’s Head (Hericium Americanum)🐻🍄
An incredible and delicious variety from the Hericium family, and sibling to the famed Lion’s Mane. Slightly sweet and spongy, delicate with a nice chew, reminiscent of lobster or crab. All hericiums are believed to be excellent brain food and studies of this species show great promise for treatment of maladies as varied as Alzheimer’s disease, cognitive performance, digestive problems, and cancers. Also, did we mention the taste?? Pure heaven ✨🤤✨

Grey Dove Oyster. The caps are larger on this species than most of the oysters. Meaty with a nice tender texture. Delicate nutty flavour with a hint of what some people say anise.

Oyster mushrooms contain vitamin B6 and D, fiber, potassium, and folate. They also contain an antioxidant called ergothioneine, which can help decrease inflammation in the body.
