Zero waste potatoes

Grew some mushrooms → used the spent substrate as compost → tossed in a few potatoes → now we’ve got more potatoes!

As you can see the weather is s**t. So all the markets are unfortunately cancelled.

No fret though , and both took twice as much this week so should be well stocked.

and have shrooms like usual if you're feeling hungry but don't want to cook.

Happy to say that based in , in and their Glasgow sister restaurant in the all did me a solid and took most of this bumper crop, give them some love and check them out!

We’re wrapping up the two-week scotland retreat it’s been a real privilege. Incredible people, inspiring conversations, and some truly special meals crafted with wild game and foraged ingredients straight from the estate.

Today we had the honour of cooking sika venison, shot earlier this week by one of the guests, prepared Asado style, a beautiful way to celebrate food sourced with care and connection to the land, we also cooked up a venison chilli.

I've been working pretty flat out these past few months. Scaling up the mushroom farm to meet demand means keeping as much money in the business as possible so evenings are spent slinging pints at . On top of that, it’s my busiest event season yet, so weekends are up in the Highlands catering or event managing.

I’ve not had a day off since June (and probably won’t until the end of November), but there’s a real sense of pride when things go right. Pulling in a good harvest like this for tomorrow’s deliveries makes it all worthwhile, things are going well, and I can finally see the light at the end of the tunnel.

And just to be clear, f**k the grindset mentality. I’m not chasing hustle for hustle’s sake. I’m doing the work because I actually enjoy it, and that makes the long hours worth it.
