One of the great things about growing and foraging mushrooms is that I get to combine it with my other work, as a freelance chef.
The freelance chef work allows me to head to some of the most beautiful places in the UK where I relish in being able to go and forage fresh mushrooms to then go into my cooking
Great quite jaunt out to get a couple of mushrooms for dinner!
I am unbelievably happy to be able to announce the site of the next urban gourmet mushroom farm at the incredible
When I started Some Funguys 3 years ago, if there was one site I aspired to be working from, it was here.
An extension of the mushroom emporium, I will be able to massively increase mushroom production and will shortly have mushrooms to sell.
We just took the keys today and there is a fair amount to build and set up but we will be posting regular updates on the build
A great end to the week cooking for
Cooking freshly foraged porcini, chanterelles and winter chanterelles over open fire
Having an absolutely fantastic time up at kildermorie estate cooking for , we've managed to find and a load of my favourite mushrooms.
It's been great as well to be able to take the guests out to teach them local foraging tips and identification, whilst also getting them to help collect the food that we then are cooking up for dinner.
All cleaned up
While the lion's manes haven't particularly enjoyed this September heatwave, the oyster mushrooms have been thriving! -To-Table
These fresh mushrooms go into the woodland mushroom dish and have food miles of 2 sets of stairs, straight from the mushroom emporium to the kitchen!"
These oyster mushrooms go straight into the woodland mushroom dish at .
No farm to table but basement to table, these shrooms are grown on site in the !
There's a reason they call it
Lovely large porcini/cep i found on a walk today, unfortunately the worms had beat me to it so I left it to them.
Some of these lions manes are literally the size of a large lions mane sized football!
These beauts were definitely part of our biggest harvest yet from the mushroom emporium.
Head on down to try the amazing lions mane dish!
In the hidden corners of ancient forests, where sunlight weaves its way through the canopy, a peculiar mushroom known as Dryad's saddle emerges. Its cap, akin to a saddle or the feathery back of a pheasant, holds a secret whispered through the winds of folklore. Legend tells of tree nymphs, the ethereal dryads, who once danced among the leaves and whispered secrets to the oaks. In this mystical realm, Dryad's saddle found its place, a bridge between the realms of plant and fungi. Tales spun like silken threads speak of woodland creatures perching upon these magical mushrooms, venturing on wondrous journeys beyond human sight. In the realm where reality melds with imagination, Dryad's saddle weaves a tapestry that echoes the enchanting bond between mushrooms and the realms of myth.

These shrooms are about ready to harvest When the edges of the caps turn upwards and before they drop their spores I'm going to pull them off the block, trim and then cook them up! Thanks again @barneybeer for letting me experiment with your spent malt
50 miles for 5 years. For my niece, Molly ❤️ www.justgiving.com/page/frances-fox?fbclid=PAAaYTwNFzOzlQLpm8pksbOCMFIQgFZOp0jlNzLCX82H8MTllUjkAyp8urARQ
Mark 2 of the volumetric pellet dispenser, still got a couple of modifications to do, like get longer bolts so I can weigh out larger volumes. Pretty happy with the build, it may not be the prettiest of things but it's certainly functional
Update on the mushrooms growing on spent brewers malt! These were innoculated without any heat pasturising, the blocks with higher % of malt got contaminated, which I fully expected ( I was wanting to figure out the threshold of failure) but I am very happy that some of them fully colonised and are now fruiting. Next step is to test our new steriliser and see if we can start incorporating larger percentages of brewers malt from @barneybeer into our production
Today is a happy day. It's always a joy opening the fruiting blocks. It's one of the regular mundane jobs in a mushroom farm but I always feel excited about the potential of the mushrooms to grow. Plus if you forget to turn on the ventilation whilst your working, you can get a little tipsy from the ethanol vapour.
Even making this video took me 30 mins of rehearsing until I was happy with the level of fluency jn my speech. Go check out www.stamma.org for more info Don't ever say "spit it out" to someone stammering and try not to offer up words or finish someone's sentences as it can really disrupt their flow of thoughts.
