It's Friday so that means it's...new cooking and recipe time! For when you're feeling a little indulgent but don't want to order takeaway, try out our take on General Tso's chicken using oyster mushrooms! Unbelievably delicious, tangy, sweet and spicy.
Ingredients:
For the mushrooms
Oyster Mushrooms
Salt
Msg
Black Pepper
Garlic powder
Potato starch or cornflour
Oil or egg to coat the mushrooms
Sauce
Vegetable oil
Grated ginger
Grated garlic
A pinch of salt
A pinch of msg
Ketchup
Hoisin sauce
Light soy
Dark soy
Rice wine vinegar
2 tbsp sugar
Seaeame oil
A cup of water
Directions:
Place mushrooms in large bowl and coat with all the dry ingredients. Once coated, place the mushrooms back in the bowl and coat again with more cornflour or potato starch.
Deep fry the mushroomsuntil crispy. Take out of the pan, wait for the mushrooms to cool down (about 20mins) then fry again to get a lovely super crispy mushroom. Put aside for now.
In the frying pan, add the minced garlic and ginger and let that fry for a few seconds. Then add the ketchup, hoisin, light soy, dark soy, rice wine vinegar, sesame oil, salt, msg, sugar and a cup of water.
Cook the sauce mixture until it turns nice and thick, then throw in the mushrooms and give them a really good mix. Serve with a bowl of rice and top with chilli flakes, seame seeds and spring onion.

This Lion's Mane steak is juicy, delicious, makes a great meat alternative and feeds your mind.
Recepie below ππ½ππ½ππ½
Ingredients
Lions Mane (about 400g)
Vegan butter(2 tbsp)
BBQ sauce (1 tbsp)
Rosemary (for garnish)
Seasoning mix:
1tbsp sage
1tbsp garlic powder
1tbsp onion powder
1tbsp paprika
1tsp salt
Mix all ingredients in a bowl then set aside
Heat up your pan and then coat with olive oil. Place the lion's mane in the pan and wait for a couple of minutes, until it starts sizzling. Now, you want to grab something you can press the mushroom down with. Another pan or a pan lid is good for this. Slowly pressing the mushroom down, keep pressing until you see water start to come out. Keep pressing, flipping it over every 3 minutes or so.
Add your seasoning mix to the pan, as well as the butter, making sure to coat both sides. Add the BBQ sauce and stir around the pan with the butter until you see a sauce develop. Give it a couple of good presses on both sides, basting the sauce over the mushroom.
Throw it in the oven for 10 minutes on 200c, take it out, garnish with rosemary and serve with sides of your choice.
