SWEET POTATO, BROCCOLI & TOFU SALAD with Soy Sweet Chilli dressing 😍🥢✨ ⁣


Serves: 2⁣

INGREDIENTS:⁣
✅ 1 head of broccoli, chopped ⁣
✅ 1 large sweet potato, chopped ⁣
✅ 200g tofu
✅ 2 large handfuls of baby spinach ⁣
✅ 1 teaspoon olive oil ⁣
✅ 1/2 tsp salt ⁣

Sauce:⁣
✅ 3 tablespoons sweet chilli sauce ⁣
✅ 1 tablespoon soy sauce
✅ 1 tablespoon lime juice ⁣
✅ 3 tablespoons water⁣
✅ 1 teaspoon sesame oil ⁣

✅ Sesame seeds for garnish ⁣

METHOD:⁣
1. Pre-heat the oven to 180° C. Line a baking tray with non-stick paper ⁣
2. Chop the sweet potato into thumb-sized pieces. Arrange it on the baking tray. Drizzle with olive oil + sprinkle of salt. Bake for 30 minutes until tender⁣
3. Meanwhile, bring a large pot of water to a boil. Blanch the broccoli for 3-5 minutes until just soft. Drain and set aside⁣
4. Make the Dressing: whisk together all the ingredients until smooth. ⁣
5. Assemble the salad: place the spinach at the bottom, then add the broccoli, sweet potato, tofu and pour the dressing over the top. Mix well until dressing is well distributed ⁣
6. Sprinkle generously with sesame seeds and serve ⁣

Easy coconut chickpea curry

​Recipe: ​1 cup of chickpeas
1/2 cup of coconut milk
1/2 cup of chopped tomatoes
1 onion – finely chopped
2-3 garlic cloves – minced
1 tsp of turmeric powder
1/2 tsp of chilli powder
1 tsp of curry powder
Salt to taste
To serve: rice and veggies of your choice

Add a dash of oil to a large pan and once hot add in the chopped onion. Fry the onion gently for 3-4 minutes until it starts to caramelised. Add in all the spices + the garlic cloves. Cook for another minute and continue stirring to avoid burning. Add a dash of water to prevent from sticking. Add in the drained chickpeas, coconut milk and tomatoes. Mix everything together, add bit of boiling water just to enough to cover the chickpeas. Put the lid on an cook on a low heat for 20-25 minutes. Serve with some rice and veggies.

Zucchini Ribbon salad with kale, roasted pistachios, feta cheese all brought together with a citrus dressing.
How many of you eat zucchini raw?? Infact I prefer zucchini raw any day, as it can get quite soft with the slightest heat applied to it. The nutrition fact remains almost the same, the only difference been when it's cooked the Vitamin A can be benefited more and when kept raw Vitamin C is kept whole.
It's really fun to make ribbons of these and it absorbs any flavour you pack into it. Really fresh, light and crunchy with a lemon, garlic, extra virgin dressing. For an added texture I have added pistachios and creamy feta and the contrasting textures contribute to a party inside your mouth!! Fresh basil on top completes the salad. You could experiment with other types of cheese like parmesan or a variety of smoked cheese shaved into the salad.
If you have not yet tried eating zucchini raw, then you should 😀 The success to a tasty salad lies in the freshest of ingredients and a simple balanced dressing. Thank you for these amazing courgettes!!

Super healthy weekend oats recipe.

COCONUT FRIED BANANA, PEACH and PISTACHIO OATS⁠💛💛💛⁠


Serves 2⁠
120g oats
380ml almond milk/milk
1/2 tsp vanilla extract⁠

Topping⁠
2 small bananas, sliced lengthways ⁠
1 tbsp sugar
1 tbsp coconut oil to fry⁠
20g sliced or crushed pistachios⁠
1/2 fresh peach, sliced⁠
Yogurt

METHOD⁠
Mix the oats with the milk and vanilla. Leave to soak for 15 mins or covered overnight in the fridge.⁠

Add the coconut oil to a frying pan. Coat the bananas in a light sprinkling of sugar and fry until golden.⁠

Top creamy oats with, coconut fried bananas, peaches, pistachios, and a good dollop of yog. Option to drizzle with honey if you prefer.⁠

We just launched a new green leafy🥬. Grown in our urban hydroponic farms.

Tatsoi is non-heading mustard that is very similar in flavour to bok choi. Tatsoi is versatile green with a mild, subtly tangy flavor well suited for raw or lightly cooked applications.
The crisp greens can be used as a substitute for bok choy, and when young, the tender leaves can be used in place of spinach.

🍔🥬GRILLED ZUCCHINI FRITTER & MUSHROOM BURGER🍔

1 small broccoli optional
3 zucchini grated
1/2 cup corn kernel
1/2 cup onion, finely chopped
1 clove garlic minced
approx. 2 tbsp chickpea flour or other flour*
salt and pepper to taste
2 tbsp oil for frying


📍INSTRUCTION:

1. Boil the broccoli and cook for just 2-3 minutes (it should not be cooked through). Then drain. Rinse the broccoli and finely chop the florets.
2. Squeeze grated zucchini and add chopped broccoli, corn, onion, garlic, chickpea flour, salt, and pepper. Stir everything together until well combined. Set aside for 5 minutes to allow the flour to absorb any excess liquid.
3. Form 8-10 fritters of the veggie mixture (or to your desired size)
4. In a large skillet, heat the oil over medium heat.
Fry the zucchini corn fritters for about 3-5 minutes on each side, or until golden brown.
Serve with your favourite dip.

Baked Chana Dal Vada - split chickpeas fritters served with homemade coconut & tomato chutney.
Recipe

For a gluten-free version, omit Asafoetida⁣⁣⁣ Ingredients⁣⁣⁣
~ 1 1/2 cups dried chana dal - soaked in hot water for 1 hour until soft⁣⁣⁣
~ 2 slices of ginger⁣⁣⁣
~ 1 cup finely chopped cabbage⁣⁣⁣
~ Finely chopped 1 small carrot, 1 small onion, 1 green chili, handful of coriander & curry leaves⁣⁣⁣
~ 1 1/2 teaspoons turmeric powder⁣⁣⁣
~ 1 teaspoon cumin seeds⁣⁣⁣
~ 3/4 teaspoon salt⁣⁣⁣
~ pinch of Asafoetida/Hing (optional)⁣⁣⁣
Drain chana dal & place it in a blender with ginger. Blend dal into a coarse mixture. Transfer it to a large mixing bowl along with other ingredients & mix until well combined. Preheat oven to 250C & brush 6 cavity donut pan with oil. Fill each cavity with dal mixture & brush a little more oil on top. Bake for 20-25 minutes until the side turns golden brown & crispy. Serve warm with chutney. ⁣⁣⁣

Tomato chutney⁣⁣⁣
~ 3 Tomatoes - cut into cubes⁣⁣⁣
~ 2 tablespoons chana dal⁣⁣⁣
~ 2 slices ginger, 2 dried chilies-seeds removed⁣⁣⁣
~ 1/2 teaspoon brown mustard seeds⁣⁣⁣
~ 5-6 curry leaves⁣⁣⁣
In a heated non-stick pan with 1 teaspoon oil, roast chana dal until golden brown. Then add ginger, tomatoes & cook to soften . Season with salt & transfer cooled mixture to a blender & blend into a fine paste. To temper, add 1/2 teaspoon oil in a non-stick pan & brown the mustard seeds. Then, add curry leaves & a pinch of Asafoetida (optional) along with the blended tomatoes. Stir continuously until well incorporated, season if needed.
⁣⁣⁣
Coconut chutney Blend together 1/2 cup frozen shredded coconut, 2 tablespoons roasted chana dal, 1/2 teaspoon cumin seed, 2 slices ginger & 1 chili pepper with few ice cubes/water into a paste. Season with salt.⁣⁣⁣

BBQ CAULIFLOWER TACOS - Looks so delicious, what do you think?
INGREDIENTS (for 8 tacos): Cauliflower sauce:
2 medium size cauliflower or a big size cauliflower
2 tbsp soy sauce
2 tbsp ketchup
1 cup water
1 tbsp taco mix spice
4 tbsp honey
1/3 cup lemon
2 tbsp olive oil

Cheese sauce:
1/2 cup cashews
1/4 cup water
3 tbsp grated cheese/ nutritional yeast
a tsp lemon
a pinch of salt
a pinch of pepper
some chopped chives

Tacos & toppings:
100g lettuce leaves
8 taco shells
a sliced avocado
red and orange sweet mini peppers chopped
some chopped red onion
some chives

METHOD:
Start by chopping the cauliflower and clean it well. Pour the ingredients for the cauliflower sauce into a food processor and blend them until smooth.
Incorporate the cauliflower to the baking tray and pour the sauce over the cauliflower, give it a good stir and bake it at 200ºC for around 30 minutes.
Basically, you want to cook slow and really well the cauliflower to make sure that it gets all the flavors from the sauce and also the texture should be soft but not crunchy.
To make the cheese sauce, simply blend all the ingredients listed for the vegan cheese sauce and make sure that the texture is even, adjust salt and pepper if needed, then mix it with some chopped chives.
To serve the cauliflower BBQ tacos, warm up the taco shells, then add to each taco: lettuce leaves, around 3 tablespoons of BBQ cauliflower, some red onion, some avocado, a tablespoon of vegan cheese and top it all with chives and sweet pepper.

Level up your bowl game with this Buddha Bowl. It’s also packed with Vegan Rosemary Orange Cauliflower “Wings” for the ultimate flavour and texture combo! 😋

❇️FOR THE CAULI WINGS ⤵️
🔹2-3 cups cauliflower florets
🔹¾ cup all-purpose flour
🔹½ cup plant milk
🔹¼ unsweetened orange juice
🔹1 tbsp orange zest
🔹2 tsp rosemary
🔹1 tsp garlic powder
🔹2 tsp sea salt
🔹1-1½ cups breadcrumbs
🔹2 tbsp olive oil

❇️ METHOD ⤵️
🔹Preheat oven to 200°C and line a sheet pan with parchment paper.
🔹In a large bowl whisk together the flour, milk, orange juice, orange zest and all the seasoning. Place the breadcrumbs in another bowl.
🔹Working in 2-3 batches, first dunk the cauliflower florets in the flour milk mixture then roll into the breadcrumbs until fully coated.
🔹Place on the battered cauli on the sheet pan, drizzle with oil and bake for 15 mins. Remove from oven and flip the florets then bake another 10-15 mins or until golden before proceeding.

❇️ FOR THE SAUCE ⤵️
🔹¾ cup unsweetened orange juice (squeezed your own)
🔹¼ cup honey
🔹3 tbsp water
🔹1 tbsp orange zest
🔹1-1½ tsp rosemary, chopped
🔹1½ tsp corn starch dissolved in 1½ tsp water
🔹½ tsp red pepper flakes (optional)
🔹1 tsp sea salt

❇️ METHOD ⤵️
🔹While the cauli wings bake, make your sauce by combining all the ingredients in a saucepan on medium heat and whisk till smooth. As soon as the mixture thickens to a syrupy consistency remove from heat, ~2-3 mins.
🔹Gently toss the cauliflower wings in the sauce then return to the sheet pan and bake until sticky and crispy, ~8 mins. Enjoy!

Vanilla yogurt topped with blueberries, bananas, mini choc chip pancakes, apple, cacao nibs and crunchy peanut butter😇🥜⁣

🌟ingredients🌟⁣
- 100g flour ⁣
- 1 tsp baking powder ⁣
- Pinch of salt ⁣
- 150ml milk /soy milk
- 1 tbsp maple syrup/ honey
- 1 tsp vanilla extract ⁣
- Handful of chocolate chips ⁣
🌟method🌟⁣
1. Combine all the dry ingredients. ⁣
2. Mix in the milk, maple syrup and vanilla extract. ⁣
3. Finally add the chocolate chips and cook your pancakes in a little oil using only 1 tsp of batter for each pancake. ⁣
