Illinois students learned at least two important lessons at this farm in central Italy: if we are willing to respect the earth, working with it and not against it, we can produce healthy, nutritious and tasty food. And, more importantly, our descendants will be able to do the same — on the same land. (This certainly cannot be said of industrial farms.) Marco, one of the founders of Azienda Pulicaro in Torre Alfina, shared his insights as we walked amidst the open grazing areas, the olive orchards, accompanied by herds of sheep and sheep dogs.
