We're excited to share our weekly vegetable harvest from the UCSI Living Lab garden with you. During the third week of March, we harvested a total of 2.5 kg of fresh vegetables mainly for the interns' consumption.

The leaves of Brazilian Spinach make great ingredients for cooking simple and typical meals at most Malaysian's kitchen such as fried rice and noodle soup.

Go and check out our Salad Puteri recipe using Brazilian Spinach in this link below;

We harvested a total of 2.5 kg of vegetables from our UCSI Living Lab garden during the second week of March, and this is a photo of one of our leafy vegetables, Javanese Ginseng, also known as Ceylon Spinach.

The leaves of Java Ginseng can be eaten raw or fried. Its shoots and leaves can be used in soups, stir-fries, and stews, as well as in salads. They may also be added to smoothies.

Java Ginseng is easy to grow and multiply even in a natural way because very light ginseng seeds are easily carried away by the wind making it easier to grow by itself.

Add new and healthy veggies to your meal!

At UCSI Living Lab we harvest every day a variety of healthy and highly nutritional vegetables such as Amaranth leaves, Moringa, Brazilian Spinach, Malabar Spinach, and many more. We also have hardy plants like Bitter Gourd, Sweet Potato, Chili, and Cucumber. In the fourth week of February, we harvested a total of 6 kg from our garden for UCSI intern's consumption.

We always try to create new recipes from our vegetables which we call it "Garden to Table".

Fundraising Christmas Lunch at LeQuadri Hotel (Hatton Restaurant) on 21 December 2020 for Teens4CAP Vocational Internship Program. Almost 60 tickets were sold and a few contributed directly towards this good cause. Thank you to everyone, including Le Quadri Hotel for co-organizing this event. Hatton Restaurant was spacious enough to host between 70 to 90 people to follow COVID 19 SOP. The food was delicious. Two departments from UCSI University, i.e. the Institute of Music (IMUS) and Centre of Excellence for Research, Value Innovation, and Entrepreneurship. Academic Qualifications (CERVIE) use this opportunity to dine together for their New Year Celebration and team-building effort. Among other that came were Professor Tajuddin and his family, Mr. Leong Sat Seng and his wife, Mr. Wonna the Chairman of Mon Refugee Organization, Mr. Kelvin Tan's staff, Ms. Noorul Huda AB from The Blue Ribbon, Ms. Mega Head Counselor of UCSI University Students Affairs and Alumni Office, and the top 2 students of Teens4CAP Eco-Edible Gardening Zoom classes. Thank you to Mr. Ian Griffin for sponsoring these tickets as their gift for doing well with the program.

Our gratitude also goes to Datin Lily Ng, Chairman of Sri UCSI School for diligently supporting us in this raising funds effort. Thanks again to those that have made a contribution both financially and through their time.
