Parsley: itโs so dang good for you, why only use it as a garnish?! ๐ฟ๐
Whether you prefer flat-leafed (Italian) parsley, or good olโ curly parsley - itโs one of the most healing herbs containing oodles of nutrients. I treat it like a leafy green or vegetable (i.e. something to be eaten in quantity), rather than as a token extra.
Itโs particularly rich in Vitamins K, A, and C. Plus it contains folate and potassium - and lots of antioxidants (flavonoids and carotenoids). It also contains trace minerals of magnesium, sulphur, iron, zinc, manganese, molybdenum, chromium, selenium, iodione, and calcium. ๐
That means that parsley is great for bone health, oxidative stress, eye health, and heart health. โค๏ธ
Parsley is a pathogen fighter that keeps bacteria, parasites, and fungus at bay. That makes it great for mouth issues too, as it impedes the growth of organisms causing gum disease, tooth decay, and bad breath. ๐
Plus parsley boosts the adrenals.๐ช
So yeah, eat as much raw parsley as you can! Add it to your juices and smoothies too. ๐ฅค
And be sure to use the stalks as well - theyโre rich in silica, which is good for your hair and nails.๐
Best of all, parsley is one of the easiest herbs to grow, and it does well in tubs and containers. ๐ชด
Just be sure to feed it every so often, and remove any yellowed leaves. ๐ฟ
For a continuous supply, re-plant annually. Itโs meant to be a perennial plant that lasts 2 years, but I find that mine starts bolting after a year, so itโs best to plan for that. ๐ฟ
Grow as many plants as you have space for. I probably have a couple of dozen plants in total - we eat a LOT of parsley! - and in winter I put some of my parsley containers in the polytunnel where they grow a bit faster. ๐
