SMOKED RABBIT (TINAPANG RABBIT)
Ingredients

Brine:
¾ cup water
½ cup apple cider vinegar
¼ cup dry white wine
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 (3 pound) whole rabbit

Rub:
1 tablespoon kosher salt
½ tablespoon freshly ground black pepper
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried parsley flakes

Directions
Step 1
Whisk water, apple cider vinegar, wine, salt, pepper, onion powder, and garlic powder together for the brine. Place rabbit in a 1-gallon plastic resealable bag. Pour brine over the rabbit and seal. Lay flat and refrigerate for 24 hours.

Step 2
Combine salt, pepper, paprika, onion powder, garlic powder, oregano, and parsley flakes in a small bowl. Stir until evenly combined.

Step 3
Remove rabbit from brine and discard brine. Rinse rabbit thoroughly and pat dry with paper towels. Spread the rub over all surfaces of the rabbit. Cover with plastic wrap and refrigerate for 1 hour.

Step 4
Remove rabbit from refrigerator 1 hour before placing on the smoker to allow meat to come to room temperature.

Step 5
Preheat an electric smoker to 250 degrees F (120 degrees C).

Step 6
Smoke rabbit for 2 1/2 hours. Wrap in aluminum foil and smoke until tender, about 1 hour more.

SLOW ROASTED RABBIT RECIPE

Ingredients:
---> 1 (3 pound) rabbit, cleaned and cut into pieces
---> 1 ¾ teaspoons salt
---> 1 tablespoon ground black pepper
---> ¼ cup vegetable oil
---> 4 teaspoons white sugar
---> 1 onion, chopped
---> ¾ cup ketchup
---> 1 clove garlic, chopped
---> 1 tablespoon paprika
---> 1 ½ tablespoons Worcestershire sauce
---> 1 cup water

Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).

Step 2
Season the rabbit with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the rabbit pieces and brown on all sides. Place in a 9x13 inch baking dish. In a medium bowl, combine the sugar, onion, ketchup, garlic, paprika, Worcestershire sauce and water; pour over the rabbit.

Step 3
Bake uncovered for 90 minutes in the preheated oven, basting frequently. Meat should be very tender when done.

RABBIT MEAT FACT

Unlike other animals like cows(beef) and pigs(pork) where there are other names to call them, rabbit meat is simply called “rabbit meat” all over the world. This is due to the fact that rabbit meat is uncommon and somewhat rare to be eaten so there are no culinary terms for it.

Most restaurants would just call it rabbit meat or would attach the word rabbit to their menu like braised rabbit, fried rabbit, etc. But it would also depend on the restaurant and what country it’s from(e.g. lapin, Conejo, and coniglia).

Ingredients:

---> 1 kilo of rabbit cut in serving portions
---> 1 tablespoon of butter
---> 2 tablespoons of cooking oil
---> 2 tablespoons of flour
---> 4 bay leaves
---> 1 onion minced
---> 2 gloves of garlic minced
---> 2 big carrots, peeled and sliced
---> 2 tablespoons of black olives (optional)
---> 1 teaspoon of vinegar (you can replace this with lemon juice or kalamansi juice)
---> 1 tablespoon of tomato paste
---> 1 bottle of San Miguel Beer (other beer or apple cider whichever is available)
---> 1 cup of chicken stock (water + chicken bouillon cube)
---> salt, pepper to taste
---> 1 tablespoon of chopped fresh parsley

Procedure:

In a bowl put your rabbit season it with salt and pepper and then dredge it with two tablespoons of flour. Then ready your casserole, under medium fire put the butter and the cooking oil. Fry lightly your rabbit be sure that all sides are little bit golden brown in color. Then remove the rabbit and set aside; On the same casserole you can add a little bit of cooking oil if necessary: fry the garlic, onion , carrots and black olives. Fry them for about five minutes then put back the rabbit. Add the salt, pepper, vinegar, tomato concentrate and bay leaves. Pour the San Miguel beer and chicken stock. Lower the fire and simmer covered for about forty minutes; Check the meat if they are tender continue simmering until the meat are tender. Taste the sauce if needs to have more salt and pepper. Turn off the fire and let it stand cover for few minutes. Before serving, you can re-heat it and topped it with chopped parsley and served with steamed rice.

RABBIT BARBEQUE RECIPE

Ingredients:
---> 1 whole Rabbit fryer
--->1 cup BBQ Sauce
---> Assorted veggies for grilling

Procedure:
---> Heat your BBQ to medium high. While it heats, Cut the rabbit's rib cage then press down flat. The ribs may pop out of the spine or break, either is fine.

---> Spread half of your marinade on the inside of the rabbit.

---> Lay your rabbit on the grill, marinade side down. Turn heat to low and cover. You want your grill to be heated at around 425 degrees. Set your timer for 15-20 minutes. Don't forget to grill that delicious liver!

---> After 15-20 minutes, coat the top side of the rabbit with half the remaining sauce and eat the liver as an appetizer. (trust me: rabbit liver is super mild and delicious!)

---> Flip the rabbit longways (so the hindlegs are now where the forelegs were) and coat with the last of the sauce. Now is a good time to add tender grilling veggies like zucchini or peppers.

---> Cover grill and cook another 15-20 minutes until juices run clear and thigh reads 160 degrees.

---> Let the rabbit rest under foil off heat for 10 minutes.

---> Chop into 6 chunks and let your guest choose their favorite piece! Remember that rabbit is more filling than chicken so a little goes a long way.

Rabbit meat is a white meat. It taste somehow like chicken but is more lean and more flavourfull than chicken.

Rabbit is usually roasted, baked in a pie, or braised in a stew or casserole to keep the meat nice and moist, but you can cook it in any way as you cook chicken. You can substitute Chicken meat with rabbit meat for any Recipe that calls for chicken.

Pinapaitan and Lechon Rabbit are a popular way of cooking Rabbits.

Grilled and Marinated Rabbit

INGREDIENTS:
---> 1 x 1.2kg/2 ½ lb rabbit, preferably wild, jointed (cut into serving pieces)
---> A handful of fresh thyme and rosemary, leaves picked
---> 4 garlic cloves, peeled
---> Olive oil
---> Zest and juice of 1 lemon
---> 1 teaspoon honey
---> 2 sprigs of thyme
---> 4 thick slices of pancetta
---> Salt and freshly ground black pepper

PROCEDURE:
Put your rabbit pieces into a bowl. Using a pestle and mortar, or a liquidizer, bash or whiz up the thyme and rosemary leaves to a pulp, then add the garlic cloves and bash or whiz again.

Stir in 8 tablespoons of olive oil, the lemon zest and juice and the honey, and pour this over the rabbit. Put the meat to one side and let it come to room temperature while you light your barbecue.

Now I’m going to talk about flavour. Get a couple of sprigs of fresh thyme and tie them together like a little brush. Each time you turn the meat, dab it with a little of the marinade to give you a lovely encrusted layer of flavour. This rabbit is going to be really tasty!

Keeping the marinade to one side, remove the pieces of meat and season with salt and pepper. Sandwich 2 slices of pancetta between the 2 pieces of belly using 3 skewers. Put the legs and shoulder on the barbecue. When they’ve been cooking for 10 minutes, put the belly on. After another 10 minutes put the saddle and ribs on. Make sure you turn the meat over every so often. Look after it by controlling the temperature and basting it continuously with the marinade. Cut three-quarters of the way through each kidney and open them out like a book. Cut the liver into 4 pieces and push one piece on to each remaining skewer, followed by a kidney and more liver.

When all the pieces of meat are beautifully cooked, add your skewered bits of kidney and liver on to the barbecue and cook until golden, along with your 2 remaining slices of pancetta. After a few minutes, when the pancetta is browned, put it on top of the meat at the cooler end of the barbie. Now get your guests round the table.

You can serve the rabbit with any white beans, or roast potatoes, or grilled vegetables, or different salads – it really depends on how you feel and what the weather’s like. Just put a big bowl of your chosen accompaniment in the middle of the table and serve all the meat on a board. Lovely with a glass of white wine. Simple, honest and bloody good.

Well, rabbit is one of the healthiest, leanest, and most environmentally friendly meats you can eat. Compared to beef, pork, lamb, turkey, veal, and chicken, rabbit has the highest percentage of protein, the lowest percentage of fat, and the fewest calories per pound.

Rabbit meat was richer in calcium (21.4 mg/100 g) and phosphorus (347 mg/100 g) than other types of meat and lower in fat (9.2 g/100 g) and cholesterol (56.4 mg/100 g). Beef had the highest cholesterol content (114.5 mg/100 g), almost double than rabbit meat, while pork was rich in fat (28.2 g/100 g).
