How to cook native chicken tinola using kalan de uling/kahoy?
1. Slaughter the live chicken and let the blood shed on the ground
2. Remove the feathers of the chicken by using hot water and chop it into your desired measure
3. Prepare the ingredients such as oil, onion, ginger, garlic, salt, vetsin, papaya and green chili.
4. Put the cooking pot on kalan de uling and let it be heated.
5. When the cooking pot is already heated, put the ingredients one after another such as oil, garlic, onion and ginger.
6. Put the chopped chicken in the cooking pot and put some amount of salt and water and cover it.
7.Boil the chicken within 7 to 10 minutes. We call it sangkutsa.
8. After sangkutsa, put reasonable amount of water and vetsin and let the chicken boil until it is nearly cooked already.
9. Finally, put the green chili and papaya and wait until it is already fully or half-cooked.
