Did you know that "Lechon" is a spanish word for roasted pig, which was derived from spanish word "leche", meaning milk? Still figuring out how are we going to call it in our future menu.

Regardless, our first try of lechon rabbit is awesome, friends love it. Even with just salt and tanglad, ended up very tasty, tender, juicy and the skin remains crispy even after hours and hours. Best of all, we know this is far healthier than other meat.

In light of the reported outbreaks of Avian Influenza Subtype H5 in neighboring countries, the government is enjoining all concerned stakeholders to observe the following precautionary measures against the incursion of AI H5N6:

1.Raise ducks in close confinement.
2.Observe good animal husbandry practices.
3.Practice strict biosecurity measures.
4.Prevent co-mingling of ducks with other avian and swine species.
5.Cooperate and participate in the active surveillance conducted by the government.
6. Promptly report any unusual poultry mortalities to the local veterinary authorities/ DA Regional Field Offices or to the Bureau of Animal Industry (Hotline Numbers: 09951329339 (Globe) and 09208543119 (Smart).
