Corn s**t is a plant disease caused by the fungus ๐๐ด๐ต๐ช๐ญ๐ข๐จ๐ฐ ๐ฎ๐ข๐บ๐ฅ๐ช๐ด. Yet, in other parts of the world like Mexico, the immature galls of infected ears of corn are considered a delicacy also known as huitlacoche. These are used in a range of different Mexican dishes such as tamales and quesadillas and are distinct because of its earthy flavor, combined with the taste of corn.
This delicacy has one of the highest protein contents of all the known edible mushrooms and more protein than regular corn itself. It is also a source of lysine, an essential amino acid, which is not found in regular corn.
