This man breed chickens when he was still 8 years old and as you observe he separate the breeds through an enclosure breeding pen. That's the difference
between raising commercial chicken over heritage chicken. When you breed heritage chicken you are preserving the identity of the birds. You need to enclose them so that certain
breeds would not cross with other heritage breeds. It is more of stewardship on preserving the identity of the bird so that over more years that breed will still exist.
