INGREDIENTS:
For the Dough:
2 cups LION Brand Self Rising flour
1/4 cup softened butter
1 tbsp yoghurt
1/4 tsp LION Brand Baking Soda
Oil for cooking + 1 tbsp ghee
For the Syrup:
2 cups granulated sugar
Water enough to just submerge the sugar
Flavouring: Rose extract/ Cardamom powder/ Saffron strands.
DIRECTIONS:
Melt the butter in a large bowl.
Add baking soda and yogurt. Mix well.
Add Lion Brand Self Rising Flour in parts, keep mixing until incorporated and forms a smooth dough.
Knead gently. Once it’s supple, rest for 15 -20 min.
Prepare sugar syrup:
Cook sugar and water until it reaches single stringed consistency.
Switch off, remove from heat. Add flavouring.
Once dough has rested, pinch small portions and roll quickly yet gently, flatten between palms and make a dent in the center OR swirl the edges and fold it inwards to make patterns.
Repeat and line on a plate.
Heat oil plus ghee in a heavy bottomed pot, keeping flame low.
When oil is hot, fry your Badushahs, in small batches.
Cook until it turns a deep golden all around.
Drain and transfer into the sugar syrup and repeat the process.
Cool completely and transfer to an airtight container.
Enjoy!
Pholourie Remix

INGREDIENTS:
2 cups LION Brand Pholourie Mix
2 sprigs of green onions, chopped finely
3 cloves garlic, chopped finely
1/2 cup finely chopped bell peppers
1/2 cup chopped onion, finely
2 teaspoons black pepper
1- 1 ½ cups Water
Oil for frying
INSTRUCTIONS:
In a large bowl mix green onions, garlic, onions, peppers.
Add Lion Brand Pholourie Mix and water- combine well.
Add oil to a deep pot on medium-high heat.
Using a scoop, or spoon drop batter into oil. Do not overcrowd the pot.
Fry until golden brown, then flip.
Remove from oil and place on a plate with napkins to drain off any excess oil.
Serve!

Ingredients:
2 1/4 cups Lion Brand Split Peas Powder
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp fenugreek powder (Note 2)
1/2 tsp chilli powder (pure chilli powder, Note 3)
2 tsp salt (cooking/kosher salt)
3/4 cups + 2 1/2 tbsp water
1 1/2 cups onions , grated using standard box grater (~1 1/2 onions)
2 cups potato (~1 large), peeled and grated using standard box grater (Note 4)
2 1/2 cups cauliflower (~1/4 large head), finely chopped into rice size pieces (or grate)
2 large red chillies (cayenne peppers), finely chopped (adjust spiciness to taste, or leave them out)
1 tbsp fresh ginger , finely grated
2 tbsp coriander/cilantro leaves , finely chopped
3 – 4 cups vegetable or canola oil (4cm / 1.5″ depth in pot)
Instructions:
Make batter: Place Lion Brand Split Peas Powder in a bowl with the spices (turmeric, cumin, coriander, fenugreek, chilli).
Slow whisk in the water.
Mix in Vegetables: Add potato, cauliflower, onion, ginger, chilli and coriander.
Mix well with a wooden spoon. It should be a thick batter, almost paste-like.
Preheat oven to 175° – to keep cooked pakoras warm.
Set a rack over a tray.
Heat oil: Heat 4cm / 1.5" oil in a large heavy based pot to 350°
Form patties: Drop 2 tbsp of batter roughly formed into a patty shape into the oil.
Don't crowd the pot, it will lower the temperature too much.
Fry pakoras: Fry 2 – 3 minutes until golden. Drain on paper towels.
Keep cooked pakoras hot in the oven on a rack set over a tray.
Serve pakoras with Coriander Mint Sauce or Minted Yogurt Sauce!
Try fresh juice, water or some delicious Good N' Natural Ginger Tea!
