INGREDIENTS:
For the Dough:
2 cups LION Brand Self Rising flour
1/4 cup softened butter
1 tbsp yoghurt
1/4 tsp LION Brand Baking Soda
Oil for cooking + 1 tbsp ghee
For the Syrup:
2 cups granulated sugar
Water enough to just submerge the sugar
Flavouring: Rose extract/ Cardamom powder/ Saffron strands.
DIRECTIONS:
Melt the butter in a large bowl.
Add baking soda and yogurt. Mix well.
Add Lion Brand Self Rising Flour in parts, keep mixing until incorporated and forms a smooth dough.
Knead gently. Once it’s supple, rest for 15 -20 min.
Prepare sugar syrup:
Cook sugar and water until it reaches single stringed consistency.
Switch off, remove from heat. Add flavouring.
Once dough has rested, pinch small portions and roll quickly yet gently, flatten between palms and make a dent in the center OR swirl the edges and fold it inwards to make patterns.
Repeat and line on a plate.
Heat oil plus ghee in a heavy bottomed pot, keeping flame low.
When oil is hot, fry your Badushahs, in small batches.
Cook until it turns a deep golden all around.
Drain and transfer into the sugar syrup and repeat the process.
Cool completely and transfer to an airtight container.
Enjoy!
