More often than not, we hold only a vague idea of a plan in our heads. Often scrapping that idea and rearranging bits and pieces as we succumb to Mother Nature's plan, cause she calls the shots.
But today the whole crew came together and made a plan. It may appear as a couple of boxes with some squiggles to you. But to us... its the most concrete thought out plan in Free Folk Farm history for our most epic market display yet!!

Okra okra, yum yum yum! Sliced in strips, tossed in olive oil, Parmesan, salt, pepper. Roasted at 450 for 20 ish minutes (maybe? We should keep better track of this stuff), flipped once while baking.

So delicious. Barely slimy… I don’t actually think it’s slimy at all when roasted, but to cover my bases I’m saying “barely”.

We will NOT be at Pendleton Indiana Farmers Market this weekend. Chuck is taking a much deserved weekend off (I think maybe the FIRST summer weekend he’s taken off in FOUR years). So find our produce at Anderson City Market or Collective Roots!

Chuck has been working hard to bring you new salad greens this summer! Including arugula and a new salad mix that will include baby kales and beet greens.

It is very difficult to grow these things well in the summer due to a little bug named the flea beetle. Flea beetles LOVE plants from the brassica family, PARTICULARLY arugula. Other brassicas they enjoy include kale, collards, radish, and turnip. If you’ve gotten radishes from us recently and noticed tiny holes dotting the leaves, that’s cuz of this little guy.

So to keep them from devouring and causing unsightly damage to the arugula and baby kale, Chuck has kept these beds covered with lightweight fabric for weeks to keep them from reaching the tender leaves. Yes, it is a pain to uncover and re-cover to w**d, or to run out every time strong wind blows the fabric up… but just look at these perfect beds of greens! Worth it?

We love Anna at Collective Roots because she’s not afraid to get her hands dirty to get the produce she wants!

She’ll be serving these golden beets she picked today at the Thursday evening pop-up market at Collective Roots Local Market & Cafe tomorrow! Check it out and meet the local vendors! The shop is located at 1102 Central Ave in downtown Anderson. The new evening pop-up vendor market is from 4-7pm.

You can find our fresh produce regularly in the store’s grocery cooler and also incorporated into the dishes from the cafe!

Looking for different ways to eat lettuce? We hope so, because we need help eating our ongoing lettuce bounty!

We tried this wilted lettuce salad for lunch today and it was absolutely delicious. It is super simple with just 5 ingredients, two of which you can get from us this week at market!

We made ours with bacon, but if you are looking for a vegan option we bet it would be good with olive oil or coconut oil instead!

And if you are looking for local bacon, Munsee Meats will be at the Yorktown Farmers Market with us on Friday, and First Fruits Family Farm stocks bacon in the freezer section at Collective Roots in Anderson!

Salad Ingredients:
1 bag Free Folk Farm lettuce mix
3 green onions
5 strips bacon*
Dressing Ingredients:
2 Tbsp bacon drippings*
2 Tbsp apple cider vinegar
1 Tbsp sugar

*For vegan option, omit bacon and replace drippings with olive oil or coconut oil (depending on your personal flavor preference)... If you are using coconut oil, toasted coconut might just be an amazing replacement for the crumbled bacon! If you try this, let us know!

Instructions:
1. Cook the bacon. Reserve the bacon drippings.
2. Chop the lettuce and green onions and combine. We used a large 3 quart bowl and it fit perfectly. (After the lettuce is wilted, the salad comes to about 2 quarts in volume)
3. In a small pan, combine bacon drippings, vinegar, and sugar. Heat until boiling and all the sugar is combined.
4. Pour the hot dressing over the lettuce mix and toss to distribute the dressing evenly.
5. Crumble the bacon strips on top. Serve at once.

This recipe makes 4-6 side servings. 2 servings if you are eating as a meal.
