It was originally intended for hamburgers when grilling, to make your burgers juicier with a spicy kick. A little history of Joly Jalapa! Back in the Summer of 1985 when a group of about 20 of us gathered outside the fence of the Anthony Downs Horse & Dog Track to watch the races, I made up a Jalapeno recipe for hamburgers to cook. We cooked these each and every year at the same site until the 199
0 when we moved the party to Studio 317 on South Jefferson Ave. It was there that the before and after gathering of the Horse & Dog races continued to grow for the next 22 years. And in 2000 “The Tony & Jon Show” was born. The GOONS were introduced and played in 2002 until this present date. Still those Jalapeno burgers were the centerpiece of the gathering along with the GOONS and beverages. With friends requesting the Jalapeno mix for their own burger use and the departure of my son, I decided to pursue a new venture and make the mix available to whoever wanted it whenever. So in December of 2011 I brainstormed with Lisa Sechler using several options of names for the Jalapeno mixture. On February 3rd 2012, trademark attorney, Brian Tooks helped me send up to the U.S. Trademark Office the name picked for approval and after several months of waiting and persuading, we were granted the Trademark name of ¡Joly Jalapa! in August 2012 September 2012 the recipe was taken to K-State’s Dr. Fadi Aramouni for testing. Amy Latta was contacted to use her keen imagination to design a label to use on the final product. Jim Bly from Kansas City did a final check before he printed the labels. In November 2012, a four gallon batch was done in the test kitchen at Original Juan’s Specialty Food’s in Kansas City, Kansas to make sure it would be a go. Other guidelines have been taken to insure that our co-packer, Original Juan’s can process ¡Joly Jalapa! Thursday March 7th 2013 at 6:45 am will be the first production date of 68 gallons. Chicken Sechler will accompany me to sign off on the first production run.
